I was keen to have a recipe on my website to use the 130g remaining cream cheese for those that make my Lemon Chicken and Cream Cheese Pasta. I converted this to be made in the Thermomix from an old Coles recipe. Any chocolate biscuit could be used - Caramel Crowns though are my favourite! :)
Ingredients
- 1 packet Arnotts Caramel Crown biscuits
- 130g cream cheese, cubed
- coconut (for rolling)
Instructions
- Place biscuits into TM bowl and mill 10 sec / speed 8.
- Add cream cheese and combine 30 sec / speed 4.
- Place combined biscuits and cream cheese into a bowl and place in fridge for 30-60 mins (this makes rolling a lot easier!).
- Roll mixture into balls and then coat in coconut.
- Refrigerate prior to serving.
Notes
This recipe can be doubled by using 2 packets of biscuits and 250g cream cheese.
These freeze very well.
Ideas on what to do with the left over cream cheese from this recipe:
- Chicken nuggets in the Every Day Cookbook requires 90g cream cheese and are delicious!

- Spread it on toast instead of butter… With jam!
- Make a No Bake Lime Cheesecake
Add it into:
– sauces
– use it to thicken gravy
– add it to cauliflower mash
– use it in muffins
– add to mash potato.

it took me a while to get around to making these, but I'm so glad I did. If you need a quick gift or after dinner treat, these are quick to whip up. And even quicker for them to disappear lol
thermofun says
lol yes they do disappear very quickly in my house too. :)

Made one batch of these they soon disappeared. Caramel crown biscuits are on special I bought a few more packets to have on hand - they are easy to whip up as a gift for someone special especially at this time of the year.

hi. I have a Thermomix and have hardly used it, I am ashamed to say. I am desperate for some gluten free recipes that could be made in it. Both meals and desserts. Also do you have any chicken recipes that are suitable to cook in it.
thermofun says
HI Lorraine - for gluten free recipes may I suggest you look at "Quirky Cooking" blog. She has heaps!
And yes i have lots of chicken recipes - just type in chicken in the search and they should come up. Enjoy! :)
