I converted this dip from a Coles magazine. I particularly love the spice cumin and what a healthy dip it is with the carrots! I would never have thought to put carrots in a dip! I found it a very nice change from the usual run of the mill dips. I had my friend’s toddler over here and she couldn’t get enough of it either! :)
Serving Size
approx. 460g
Ingredients
- 500g carrots, quartered
- 1000g boiling water from kettle
- 30g olive oil
- 1 teaspoon cumin, ground
- 2 garlic cloves, peeled
- salt and black pepper, to taste
Instructions
- Place carrots and water into TM bowl and cook 20 mins / 100°C / speed 1 / Reverse.
- Drain water from TM bowl.
- Add remaining ingredients and chop 1 sec / Turbo.
- Scrape down and repeat until desired consistency.

Enjoyed this dip. I had a small amount of raw pumpkin left so included that too. It worked well!
