    Thermomix Baileys Irish Cream Recipe

    Thermomix Baileys Irish Cream - born out of a ThermoFun Facebook member asking me to convert this recipe for her and as a lover of Baileys I really couldn't say no now, could I?!  :)

    2 litres + tester glass

    Baileys Irish Cream with ice

    Ingredients

    • 200g milk chocolate melts
    • 400g condensed milk
    • 750ml evaporated milk (2 x 375ml cans)
    • 300ml pure cream
    • 1 tablespoon instant coffee, dissolved in 3 tablespoon boiling water
    • 700ml bottle whisky, Jamesons is recommended

    Instructions

    1. Place chocolate into TM bowl and grate 10 sec / speed 9. Scrape down.
    2. Melt chocolate 5 mins / 50°C / speed 3. Scrape down.
    3. Add condensed milk and mix 5 mins / 50°C / speed 3.
    4. Set TM 2 mins / 50°C / speed 3 and while blades are moving, add both cans of evaporated milk, cream and dissolved coffee.
    5. Pour mixture into a 3 litre jug.
    6. Pour whisky into TM bowl and 'clean the bowl' 5 sec / Turbo.
    7. Pour whisky into jug and mix with aid of spatula.
    8. Pour into bottles and keep refrigerated up to 3 months.

    Pour any mixture that won’t fit into bottles into a glass.

    1. Add 2-3 cubes of ice.
    2. Drink immediately and admire your work.

    Notes

    * Contents of bottle/s will settle and give the appearance of 'splitting' - this is normal. Just give bottle a good shake to re-mix ingredients before each use.
    * The whiskey can be substituted with butterscotch schnapps.

      I've seen this recipe for homemade Irish Cream Liquor around for a while but was never really interested. I mean Baileys is alright but I tend to like mixing lots of different drinks so just pouring out a drink of Irish Cream over ice is nearly boring in my books. My view of this changed when we were given the lovely gift of a bottle of home-distilled Grappa (700ml!). It was just too strong and not to our liking to drink neat and I was not inspired to use it in cocktails.
      So I came up with the idea of making this recipe using the Grappa. I am blown away! It's so much more than the bought stuff. It tasted delicious! I basically just want to drink it all the time now.
      Why am I writing this? Because I have seen lots of discussions on which Whisky to use for this recipe and I want to encourage everyone - use what you have. Have you been given a bottle of alcohol that is not to your liking? Use it! I bet it could be done with vodka, whisky, brandy, rum.... well and Grappa. Wouldn't recommend Gin due to the herbal notes in it but hey, even that might end up tasting spectacular ;-)

      I have made this recipe so many time and it never disappoints, for an extra indulgent version I use a 30ml shot of espresso instead of instant coffee, double cream instead of pure cream& last but very importantly high quality dark chocolate instead of the melts. Honestly it’s better than the branded version and always receives amazing response

      Hey, sorry if it's a silly question. But I made 5 bottles of this tonight and placed them in the fridge. Pulled one out after a few hours and its "solid" couldnt even shake it. Meant to be the families Christmas presents. What have I done wrong? And any ideas how to fix it? I used all the quantities listed and a tiny bit of vanilla.

      Why do we wait til Christmas to try this recipe? Well i have and i did and after trying so many other receipes throughout the years this comes pretty close to the real thing. Didn't need to change a thing.

      For a peppermint version, try using 2 blocks of cadburys peppermint chocolate instead. When it melts it turns into balls, but when you add the condensed milk it'll dissolve perfectly. You might get away with using only 1 block, but I like the extra chocolatey flavour with the extra block of chocolate.

      Omg. Amazing! The ratings must be rigged, I almost wondered if I should try another recipe coz of it being 3.5 stars. Someone must've failed somehow?! Coz this is to die for. Thanks so much. I used good quality choc, Jameson's and instead of instant coffee I did 2 shots of Nespresso (and used 4 tablespoons of it, so not quite the whole lot). So smooth..I don't normally rate recipes, but I'm in heaven haha. And maybe a tad tipsy

      I made this tonight whilst waiting for dinner to cook. Wow wow wow ! I poured my husband and I a glass each , with ice of course , because that was what was left over. We absolutely loved it. I am now going to buy more ingredients and make a few small bottles as Xmas gifts. Fabulous and so easy. Thank you, thank you.

      I made this recipe last year for gift. Fantastic.
      I recently made more and I have just realised I did not add the 300ml cream? Will it be ok, or can I just add the cream and mix well.

        Hi Katie, I've only ever used pure cream so I'm not sure. I'd say the thickened cream would make it a slightly thicker consistency. Only one way to find out though!! If you do try we'd love to know how it goes.

      What an AWESOME recipe Leonie! HOW excited am I to have FINALLY made this as the first of many recipes for New Year hampers I am making! Based on the above, I went with 2 cans of condensed milk 395 ml each, 1 can evaporative milk , 375 ml, used Plaistowe dark chocolate and 310 ml of Jamisons! PERFECT! This made 10 mini milk bottles approximately 180 ml filled! DELICIOUS!

      I was alerted to your Baileys recipes via The 4 Blades, and made a batch each of the Baileys and the cranberry/pistachio fudge to give away as gifts – the fudge especially was a big hit. So I just made my second batch of the Baileys but made some alterations …. the original recipe wasn’t quite chocolatey enough for my taste and I thought the evaporated milk flavour came through – so this time, I used dark chocolate, and switched the canned milks around, adding 2 of condensed and 1 of evaporated (omitted the cream, as The 4 Blades suggested) … and oh my! Hope there’ll be some left for the intended recipients! Thanks for such an easy, amazing recipe.

      Thankyou for a wonderful recipe - I made a batch of this today and it was delicious :) Admittedly I'm not a huge drinker, so I only added 300ml of Jamesons which was enough for me - still got the whiskey kick, but didn't overpower the flavours. Next time I might add a bit more chocolate, or experiment with some flavoured schnapps or Top'n'Fill and see how it goes :)

      Have just made another 2L batch of liquid gold!! Thank you for such a great easy recipe! Just thought I'd let you know that sometimes I sub in Butterscotch Scnapps for the whiskey and coffee to make a Caramel Baileys. Mmmm.. caramelllll ;)

        'apparently' Jocelyn it will be fine for 3 months - it should be kept in the fridge though because of the cream in it.
