I'll openly admit that I've never been a huge fan of shepherds pie. Tania loves it and shared her recipe with me saying I will definitely enjoy this one! This Thermomix Curried Shepherd's Pie certainly did change my opinion dramatically! This shepherds pie has been completely and utterly transformed with the addition of my ThermoFun Curry Blend! Brilliant idea Tania! :) Yes it is that amazing! You must, yes I am forcing you, (as it was forced upon me!) to try this recipe! :)
If you follow a low carb/keto lifestyle, adjust the ingredients accordingly and use my cauliflower mash recipe.
If you are wanting to cut down on the fighting at the dinner table for seconds and who gets the bigger serve - then I suggest individual ramekin/containers to cook it in. Perfect for when you only have a couple of serves to make and want to freeze some portions for later.
A really great recipe to make a couple of days before and let the flavours develop in the fridge overnight :D DELICIOUS!

Ingredients
- 100g cheddar cheese, cubed
- 2 garlic cloves, peeled
- 1 onion, peeled and halved
- 20g olive oil
- 1 carrot, quartered
- 1 stick celery, quartered
- ½ red capsicum, halved
- 1 small zucchini, quartered
- 500g beef mince
- 140g ThermoFun Tomato Paste
- 20g TM vegetable stock concentrate
- 1 tablespoon ThermoFun Curry Blend
- 120g frozen peas
- 1 handful fresh coriander, chopped
- 400g can creamed corn
- 1 batch ThermoFun Garlic Potato Mash OR ThermoFun Cauliflower Mash
Garlic Potato Mash
- 2 garlic cloves, peeled
- 160g milk
- 1000g potato, 2cm cubed OR 600g potato and 400g sweet potato, cubed
- 50g butter, cubed
- 1 teaspoon salt
- grinds of black pepper
Instructions
- Grease a rectangular casserole dish.
- Place cheese into TM bowl and grate 6 sec / speed 6. Set aside.
- Place garlic, onion and oil into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add carrot, celery, capsicum and zucchini and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add tomato paste, stock and curry blend.
- Place mince into simmering basket and insert into TM bowl. Cook 8 mins / 100°C / speed 1.
- With aid of spatula, break up mince and carefully tip it into the sauce. Add peas and coriander and coat mince with sauce and cook a further 2 mins / 100°C / speed 1 / Reverse / MC off, placing simmering basket on TM lid to prevent spatter.
- Pour mince into casserole dish. Wash TM bowl.
- Spread a layer of creamed corn evenly on top of the mince.
- While making the mash, preheat oven to 180°C.
Potato Garlic Mash
- Place garlic into TM bowl and chop 3 sec / speed 8. Scrape down and repeat.
- Add milk and potato and cook 18 mins / 100°C / speed 2.
- Add butter, salt and pepper and mash 20 sec / speed 4.
- Spread mashed potato or cauliflower mash on top of meat.
- Sprinkle with grated cheese and bake 25 mins.
- Remove from oven and allow to rest for 10 mins.

Made this tonight with kangaroo mince and was absolutely delicious used a sweet potato mash
as kangaroo is quite bland i used a double dose of Leonies curry powder and some wholegrain mustard mmm

This has become a family favourite. I make a large one with potato for the hubby & kids, and a small one for me with caulimash. My daughter likes to have the leftovers for breakfast the next day too.
