You know at least once a year I'll make something with Baileys! So these Thermomix Little Baileys cheesecakes are so DELICIOUS that you will have to make sure that you have an extra bottle of Baileys on hand!
They are literally bite size, or maybe two bites if you are being polite! They're perfect if you are just after something for two or a small gathering. If you are wanting something for a larger crowd you will need to double or triple the process.
NOTE: These work best with the FOIL cupcake moulds - not the silicon or paper ones.

Ingredients
- 8 foil cupcake molds
- 8 Butternut Snap Cookies OR 8 Choc Ripple biscuits
- 8 teaspoon + 30g Baileys Irish Cream, divided
- 200g ricotta
- 250g cream cheese, cubed
- 60g icing sugar
- Fresh strawberries and chocolate, for garnish
Instructions
- Place cookies/biscuits upside down into base of each mold.
- Drizzle 1 teaspoon of baileys over each cookie/biscuit.
- Place 30g baileys, ricotta, cream cheese and icing sugar into TM bowl and mix 10 sec / speed 8. Scrape down and repeat.
- Divide mixture between molds.
- Refrigerate for 2-3 hours or until set.
- Garnish with strawberries and chocolate.
Notes
Silicone molds can be used, however I found removal is easier with foil tins.
