    Chicken Masala - Week 18, 2017

    Another week has passed us by - and it feels like only yesterday I was emailing you about that Choc Banana Anzac Cheesecake!  Did you make it?

    This week I have the most delicious, okay one of the most delicious chicken curry inspired dishes, the thermomix Chicken Masala.  Just the right amount of spice and with the cooler weather fast approaching 'down under' it's that perfect comfort warming food.  :)

    Served up with the turmeric rice or if you are eating a particular way - cauliflower rice is also a nice accompaniment.

    This one will become a sure family favourite in your house as it has mine.  Don't forget to check out all my other amazing curry dishes as well.

    Chicken Masala – ThermoFun

    thermomix-Chicken-Masala

    Ingredients

    Curry

    • 1 teaspoon ThermoFun Garam Masala
    • 3 tablespoon ThermoFun Tandoori Spice Mix
    • 1000g chicken thighs, cubed
    • 1 teaspoon paprika, sweet
    • 40g butter
    • 1 onion, peeled and halved
    • 3 garlic cloves, peeled
    • 3cm ginger
    • 40g ThermoFun Tomato Paste
    • 400g can tomatoes, diced
    • 20g TM vegetable stock concentrate
    • 2 teaspoon brown sugar
    • 1 teaspoon salt
    • 150g cream
    • mixed green vegetables e.g. broccoli, asparagus cut into pieces

    Rice

    • 400g basmati rice
    • 1000g boiling water from kettle
    • 1 teaspoon turmeric, ground
    • 20g TM vegetable stock concentrate

    Instructions

    Curry

    1. Make ThermoFun Garam Masala and set aside.
    2. Make ThermoFun Tandoori Spice Mix and set aside.
    3. Marinate chicken with paprika and tandoori spice mix for 20 mins.
    4. Place butter, onion, garlic and ginger into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
    5. Add chicken, tomato paste, tomatoes, stock, sugar, salt and 1 teaspoon garam masala and cook 15 mins / 100°C / speed 1 / Reverse.
    6. Add cream and cook 3 mins / 100°C / speed 1 / Reverse.
    7. Place chicken into ThermoServer to keep hot.
      No need to wash TM bowl.

    Rice

    1. Pour boiling water, stock and turmeric into TM bowl.
    2. Place rice into simmering basket and rinse under cold tap until water runs clear. Carefully insert basket into TM bowl. Add vegetables into Varoma and place assembled Varoma onto TM lid and cook 18 mins / 100°C / speed 4.
    3. To serve, place curry on a bed of rice and serve with vegetables.
