    Hungarian Mushroom Soup - Week 28, 2017

    The count down is on for our move to Melbourne, so I am trialling all the soups I can find, to find out what is going to keep us warm!  Let me assure you this thermomix Hungarian Mushroom Soup look is to be ignored over the taste!  :)

    Just think about the taste!  A beautiful "meaty" dish with the mushrooms.  The hit of the tamari or soy sauce is a beautiful accompaniment and the little hit with the paprika gives it a wonderful warmness that you expect when someone says hungarian.  I hope you enjoy it as much as we do.  :)

    Hungarian Mushroom Soup – ThermoFun

    Thermomix-Hungarian-Mushroom-Soup

    Ingredients

    • 1 onion, peeled and halved
    • 20g butter
    • 500g mushrooms, roughly sliced
    • 1 tablespoon paprika
    • 2 teaspoon dill, dried
    • 1 tablespoon soy sauce or tamari
    • 500g boiling water from kettle
    • 20g TM vegetable stock concentrate
    • 250g milk
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 10g lemon juice
    • handful parsley, chopped
    • 125g sour cream

    Instructions

    1. Place onion and butter into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
    2. Add mushrooms and paprika and continue to sauté 5 mins / Varoma / speed 1 / Reverse / MC off.
    3. Add dill, soy/tamari, water, stock and milk.
      WARNING: WHEN PUREEING HOT LIQUIDS FOLLOW THE DIRECTIONS IN YOUR THERMOMIX INSTRUCTIONS MANUAL.
    4. Carefully blend 30 sec / speed 9, gradually increasing from speed 1 to speed 9 .
    5. Cook 10 mins / 100°C / speed 1.
    6. Add salt, pepper, lemon juice, parsley and sour cream and cook 3 mins / 90°C / speed 1.
