The count down is on for our move to Melbourne, so I am trialling all the soups I can find, to find out what is going to keep us warm! Let me assure you this thermomix Hungarian Mushroom Soup look is to be ignored over the taste! :)
Just think about the taste! A beautiful "meaty" dish with the mushrooms. The hit of the tamari or soy sauce is a beautiful accompaniment and the little hit with the paprika gives it a wonderful warmness that you expect when someone says hungarian. I hope you enjoy it as much as we do. :)

Ingredients
- 1 onion, peeled and halved
- 20g butter
- 500g mushrooms, roughly sliced
- 1 tablespoon paprika
- 2 teaspoon dill, dried
- 1 tablespoon soy sauce or tamari
- 500g boiling water from kettle
- 20g TM vegetable stock concentrate
- 250g milk
- ½ teaspoon salt
- ½ teaspoon black pepper
- 10g lemon juice
- handful parsley, chopped
- 125g sour cream
Instructions
- Place onion and butter into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add mushrooms and paprika and continue to sauté 5 mins / Varoma / speed 1 / Reverse / MC off.
- Add dill, soy/tamari, water, stock and milk.
WARNING: WHEN PUREEING HOT LIQUIDS FOLLOW THE DIRECTIONS IN YOUR THERMOMIX INSTRUCTIONS MANUAL. - Carefully blend 30 sec / speed 9, gradually increasing from speed 1 to speed 9 .
- Cook 10 mins / 100°C / speed 1.
- Add salt, pepper, lemon juice, parsley and sour cream and cook 3 mins / 90°C / speed 1.
