    Thermomix Fish with Lemon, Caper Butter Sauce

    With all that is happening around our house at the moment I am in NEED of simple dishes.  This Thermomix fish with lemon, caper butter sauce is the most simplest dish AND it really packs quite a lot of flavour! I honestly could eat this every night of the week! It has all the makings of a versatile sauce - try it with Chicken or even some grilled fish :D

    Testers have said don't skimp on the capers, but personally I'm not a fan - and I still really enjoyed it! If you have an aversion to capers, you could most definitely leave them out or google says you could sub with green olives or kalamata olives - I've not tried it!

    Paired with the cauliflower mash, & steamed vegetables it's a great mid week dinner, but you could also weekend it and add some chips/fries.

    Honestly whatever you eat it with, you just have to make it!  And if you aren't cooking for the whole family the sauce keeps well in the fridge.

    Feeding more than the standard 4 pending on your fish size you can possibly fit up to 6 parcels on the top Varoma tray!

    Fish with Lemon, Caper Butter Sauce – ThermoFun

    Thermomix Fish with Lemon, Caper Butter Sauce, mashed cauliflower and steamed veg

    Ingredients

    Lemon, Caper Butter Sauce

    • 1 garlic clove, peeled
    • 3cm stem of leek or 1 spring onion
    • 10g olive oil
    • 220g white wine
    • 80g butter
    • 110g cream
    • 1 teaspoon dill, dried
    • 2 tablespoon capers
    • 1 large lemon, juice only
    • salt and pepper, to taste

    Steamed Fish, Vegetables & Cauliflower Mash

    • 1 medium cauliflower cut into medium florets
    • 800g boiling water from kettle
    • 4 white fish fillets, eg hoki, ling, snapper
    • 4 sheets of baking paper, to wrap fish parcels
    • 1 teaspoon dried mixed herbs
    • ½ lemon, thinly sliced
    • mixed veg of choice eg broccoli, zucchini, carrot cut into medium sized pieces
    • 40g butter
    • salt and pepper, to taste
    • Optional: snips of chives or other herbs

    Instructions

    Lemon, Caper Butter Sauce

    1. Add garlic, leek/spring onion and oil into TM bowl and chop 3 sec / speed 8. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
    2. Add wine and cook 7 mins / Varoma / speed 2 / MC off.
    3. Add butter, cream, dill and capers and cook 3 mins / 100°C / speed 2.
    4. Option, if wanting a thicker sauce: poor approx. ½ cup of sauce into a small bowl, stir and dissolve in 1 teaspoon cornflour. Pour back into TM bowl.
    5. Add lemon juice, salt and pepper and mix 30 sec / 100°C / speed 2. Set aside in a small jug, covered.

    Steamed Fish, Vegetables, Cauliflower Mash

    1. Place cauliflower and water into TM bowl.
    2. Place a piece of fish onto each sheet of baking paper, sprinkle with some mixed herbs and place lemon slices on each. Fold the baking paper over the top and tightly fold up the sides so you have secured little parcels. Place these on the top Varoma tray and place assembled Varoma on to TM lid and cook 8 mins / Varoma / speed 1 / Reverse.
    3. Add mixed vegetables into deep dish of the Varoma and continue cooking 10 mins / Varoma / speed 1. Set Varoma trays aside until serving.
    4. Place simmering basket into sink. With aid of spatula, squeeze out as much water as possible to drain cauliflower well.
    5. Place cauliflower, butter, salt and pepper into TM bowl and mix 20 sec / speed 7.
    6. Stir through optional herbs.

      I had some leftover of the lovely sauce, so the next night I tossed it through some zoodles and smoked salmon. Wow!...that was really delicious too.
