It's no secret that my second love is Seafood - and since owning a Thermomix - well you get the idea - more seafood & more chocolate! :) This dish is a really beautiful meal with just the right amount of spice to compliment the fresh wild caught prawns. I am salivating just typing this you know! :)
Ingredients
- 1½ - 2 tablespoon Thermofun Cajun Spice Mix
- 600g medium prawns, raw, peeled
- 400g spiral pasta
- 2 garlic cloves, peeled
- 1 onion, peeled and halved
- 20g olive oil
- 20g TM vegetable stock concentrate
- 160g thickened cream
- 120g white wine
- black pepper, to taste
- 50g baby spinach
- fresh chopped parsley, for garnish
Instructions
- If making Cajun Spice Mix do this now and set aside.
- Place prawns in container/ziplock bag and add 1½ - 2 tablespoon Cajun spice. Combine well and marinate in fridge for min 30 mins.
- Cook pasta in your ThermoServer Click Here for directions.
While your pasta is cooking, continue on to make your sauce. - Place garlic, onion and oil in TM bowl and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / Reverse / MC off.
- Add stock, cream, wine and pepper and cook 10 mins / 100°C /
speed 1 / Reverse. - With aid of spatula, stir gently to coat prawns with sauce.
- Cook 4 mins / 100°C / speed 1 / Reverse.
- Drain pasta and return to ThermoServer.
- With aid of spatula stir through spinach in TM bowl.
- Pour sauce into ThermoServer and combine well with pasta.
- Garnish with parsley.
Notes
Don't be tempted to cook the prawns any longer as they will continue cooking in the ThermoServer.

Mr 13 made This tonight. We both enjoyed it. It was simple to make and tasty.
We didn’t have prawns so used marinara mix.
We didn’t have enough marinara mix so topped it up with heaps of diced veg which mr 13 threw in at the same time as the seafood.
Used about one and a half tablespoons of the spice and that was just right.

I made this tonight and it was yum. I just sprinkled with Cajun spice while preparing everything else. I used frozen spinach as I didn't have fresh. This was very easy and tasty!

Can you use chicken instead of prawns?

I haven't tried this one with chicken but I would think it would be lovely. If using raw chicken add it with the stock etc but it will need 16 mins cooking. Or if using cooked shredded chicken add it at step 5. I'd love to hear how it goes for you. :)

Made for dinner tonight. Was yummier than expected we aren't big seafood eaters but this had lovely flavour.
