Last week on my website, I published a recipe for Cajun Spice Mix. I'm really enjoying using the mix in various recipes. I've always enjoyed prawns and this cajun spice really makes it lovely with everyone scraping their plates wanting a second helping. :)

Ingredients
- 1½ tablespoon Thermofun Cajun spice mix (depending on heat required)
- 2 garlic cloves, peeled
- large handful fresh parsley, divided
- 1 leek, quartered
- 1 teaspoon paprika, sweet
- 20g olive oil
- 1 red capsicum, quartered
- 1 small zucchini, quartered
- 300g arborio rice
- 450g boiling water from kettle
- 20g TM vegetable stock concentrate
- 400g tomatoes, can or fresh, diced
- pinch of black pepper, ground
- 500g medium prawns, raw, peeled
Instructions
- Make ThermoFun Cajun Spice Mix and set aside.
- Place 1½ tablespoon Cajun spice, garlic, parsley (set aside some for garnish), leek, paprika and oil into TM bowl and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add capsicum and zucchini and chop 3 sec / speed 5. Scrape down.
- Add rice, boiling water, stock, tomatoes and cook 14 mins / 100°C / speed 1 / Reverse.
- Add pepper and prawns. With aid of spatula, stir gently to coat prawns with sauce.
- Cook 4 mins / 100°C / speed 1 / Reverse.
- Divide risotto between plates.
- Garnish with parsley.
