Sitting down to tuck into a lovely scrumptious curry is one of my favourite things to do on a cold winters night. This is a very family friendly recipe as it is not at all spicy and doesn’t need any chilli. If however you are a chilli lover and like a bit of heat by all means you can add it if you wish.
Ingredients
- 3 garlic cloves, peeled
- 1 large onion, peeled and halved
- 20g olive oil
- 800g chicken thigh fillets, cubed
- 1 tablespoon ThermoFun Curry Blend
- 1 teaspoon cinnamon, ground
- 1 teaspoon coriander, ground
- ¼ teaspoon cloves, ground
- ¼ teaspoon black pepper, ground
- 20g TM vegetable stock concentrate
- 1 can chickpeas, drained
- 140g ThermoFun Tomato Paste
- 20g ThermoFun Tomato Sauce
- 20g lemon juice
- 200g boiling water from kettle
To serve, with cooked rice and garnish with fresh coriander
Instructions
- Place garlic, onion and oil into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add chicken and spices and cook 5 mins / 100°C / speed 1 / Reverse.
- Add stock, chickpeas, tomato paste, tomato sauce, lemon juice and boiling water and cook 13 mins / 100°C / speed 1 / Reverse.
- Serve with rice and garnish with coriander.
