    Thai Chicken Mince - Week 30, 2014

    I’m a huge fan of Thai food with all their tasty spices.  This mince goes beautifully with vermicelli – it would even go really nicely within a Thai Salad.

    ThermoFun – Week 30 – Thai Chicken Mince

    ThermoFun – Week 30 – Thai Chicken Mince

    Ingredients

    • 500g chicken mince
    • handful fresh coriander
    • lemongrass 1 stem cut into chunks
    • 1 onion, peeled and halved
    • 1 teaspoon ThermoFun Thai Seasoning
    • 20g olive oil
    • 50g ThermoFun Sweet Chilli Sauce
    • 30g fish sauce
    • juice of one lime or lemon
    • 2 teaspoon brown sugar
    • vermicelli, to serve

    Instructions

    1. Place coriander and lemongrass into TM bowl and chop 5 sec / speed 8.
    2. Add onion, Thai seasoning and oil and chop 3 sec / speed 5.
    3. Scrape down and sauté 5 mins / Varoma / speed 1.
    4. Add chilli sauce, fish sauce, lime/lemon juice and sugar.
    5. Place chicken mince into simmering basket and cook 10 mins / 100°C / speed 2. Break up mince with spatula and cook a further 5 mins / Varoma / speed 2.
    6. Tip mince into TM bowl. With aid of spatula cover mince with the sauce in TM bowl and then cook for a further 5 mins / 100°C / speed soft / Reverse.
    7. Serve on top of vermicelli.

      Cooking as I type - smells DIVINE!!!! We are having it in lettuce as we are a low carb GF household..... Cannot wait to taste!

        OMG!!!!!!! There is only one problem with this - the family are now arguing over who gets to lick the bowl!!!!! Served on a bed of delicious shredded lettuce as it was too tight for me to get cups from but will be a definite regular on the menu plan!!

      Ooh... Hubby has added a curve ball... Next time have on lettuce leaves to make a thai style San chow bow!!!!!!! :-D

        oh Leisa that's too funny as would you believe a couple of nights ago we had San chow bow for dinner, and my son mentioned this chicken mince recipe saying I should've made that to go in the lettuce!! :)

      Made tonight... Had no lemongrass but it wasn't an issue! Also, no thai seasoning... So I made my own.

      Next time I might add som thin red capsicum, carrot in thin ribbons and some green veg too in that last 5 mins :-)
