    Thai Chicken Curry - Week 32, 2015

    I've always been a lover of Thai curries. Using my laksa paste in this recipe takes it to a whole new level.  I hope you enjoy it as much as we do.

    Thai Chicken Curry – Week 32, 2015

    Thai Chicken Curry – Week 32, 2015

    Ingredients

    • 400ml coconut cream
    • 1 batch of ThermoFun Laksa Paste
    • 1 onion, peeled and halved
    • 20g olive oil
    • 1kg chicken thighs, cubed
    • juice of half a lime
    • choice of bite sized vegetables
    • 400g rice
    • 1000g boiling water from kettle
    • fresh coriander leaves to garnish

    Instructions

    1. If making coconut cream do this now. Set aside.
      No need to wash TM bowl.
    2. Make ThermoFun Laksa Paste.
    3. Add onion and oil and chop 3 sec / speed 5.
    4. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
    5. Add chicken and cook 5 mins / Varoma / speed 1 / Reverse.
    6. Add lime juice and coconut cream and cook 15 mins / Varoma / speed 1 / Reverse / MC off and place simmering basket on top of TM lid to prevent any spatter. Set aside in ThermoServer to keep hot.
    7. Prepare and cook rice and vegetables.
    8. To serve, top rice with chicken and garnish with coriander. Serve with vegetables.
