It's another Curry! Yes it's another Curry! I love Curry and you will learn to love it just like me! :D Nah you don't have to if you don't want to, BUT this is a really, really, really yummy thermomix tikka chicken!
Now you know not much would stop me from serving up curry every night of the week - particularly if it's loaded with coriander!! lol!! ;) However, when my daughter came home from her India mission trip raving about tikka curry - you know I was straight into the curry books looking for a recipe to share with Diana!
Finally after much testing :D we found the recipe that she feels matches as closely as her Indian experience and I have to say I just can't wait to get over to India and go on an eating adventure! :D They have chocolate there don't they? or is it bring your own? :D

Ingredients
- 3 teaspoon ThermoFun Curry Blend
- 3 teaspoon ThermoFun Garam Masala
- 400ml coconut cream
- 4 garlic cloves, peeled
- 4cm ginger, fresh
- 2 onions, peeled and halved
- 20g coconut oil
- 1000g chicken thighs, diced
- 100g ThermoFun Tomato Paste
- 40g vegetable stock concentrate, divided
- ½ teaspoon chilli powder (optional)
- ½ teaspoon salt
- pepper, to taste
- fresh coriander, chopped
- 400g basmati rice
- 1 teaspoon turmeric
- 1000g boiling water from kettle
Instructions
- Make ThermoFun Curry Blend and set aside.
No need to wash TM bowl. - While curry blend is cooking, make ThermoFun Garam Masala and set aside.
- Make coconut cream and set aside.
No need to wash TM bowl. - Place garlic, onion, ginger and oil into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add chicken, tomato paste, 20g stock, coconut cream, 3 teaspoon garam masala, 3 teaspoon curry blend, chilli powder, salt and pepper and cook 18 mins / 100°C / speed 1 / Reverse.
- With aid of spatula stir through coriander.
- Place in pre-warmed ThermoServer.
No need to wash TM bowl.
TO COOK RICE:
- Pour 1000g boiling water, 20g stock and 1 teaspoon turmeric into TM bowl.
- Weigh rice in simmering basket and rinse under cold tap until water runs clear. Carefully insert basket in TM bowl and cook 18 mins / 100°C / speed 4.
