There comes a time when I just can't speak - I know it doesn't happen often and it usually only happens around chocolate but these thermomix chicken fajitas are just absolutely delicious!! It could have been the fact that it was just a quick easy dish that we gobbled down after Steve's chemo session or maybe because it has the delicious ThermoFun Taco Seasoning - in the end who cares! :)
You will just want it on the dinner menu regularly and that's all that matters!
Ingredients
- 2 batches ThermoFun Taco Seasoning - divided (2 tablespoon in total if you already have some made up)
- 600g chicken thighs, sliced into long strips
- 20g olive oil
- 2 garlic cloves, peeled
- 1 large onion, halved
- 1 red capsicum, quartered
- 20g ThermoFun Tomato Paste
- 400g can red kidney beans or black beans, rinsed and drained
- 10g lime juice
- 1 handful fresh coriander, chopped
- salt and pepper, to taste
- 1000g boiling water from kettle
To Serve
- tortillas
- 1 batch ThermoFun Salsa
- guacamole
- shredded lettuce, sour cream and grated cheese
Instructions
- Make Taco Seasoning and set aside.
- Place chicken in a container or ziplock bag and marinate with 1 tablespoon Taco Seasoning.
- Place oil, garlic, onion, capsicum and tomato paste into TM bowl and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / Reverse / MC off.
- Add remaining Taco Seasoning, beans, lime juice, coriander, salt and pepper and with aid of spatula stir to combine. Cook 5 mins / 100°C / speed 1 / Reverse.
- Set aside in pre-warmed ThermoServer.
No need to wash TM bowl. - Pour boiling water into TM bowl.
- Using tap water, wet and squeeze out baking paper then lay it flat onto the Varoma tray. Twist corners of baking paper to make a ‘bowl’, ensuring there are enough uncovered holes for steam to circulate.
- Place chicken onto Varoma tray and place assembled Varoma onto TM lid and cook 18 mins / Varoma / speed 1.
- Carefully drain and discard the excess juice from the chicken in the Varoma tray before combining the chicken with the beans and sauce in the ThermoServer.
