10 weeks into the year already! That's just crazy! Autumn is now here down-under and that means the lead up to the cooler months. I'm not sure I am ready for the cold, but I certainly am ready for not so hot! So to celebrate autumn, these thermomix chicken and lemongrass dumplings are the perfect addition to the menu - whatever the occasion!
I know quite a few of you have been trying my steam pork dumplings and are really enjoying them, so I know this one will also be a crowd fav! The subtle lemongrass gives this a wonderful light and refreshing flavour. Paired with the sweet chilli sauce and you might have to fight off the family for just one!
A bonus with this recipe and the other dumplings is you can double the recipe and you have some amazing dumplings ready for steaming any day or occasion of the week!

Ingredients
- ½ onion, peeled
- 1 stalk lemongrass, thinly sliced into rings
- 2cm fresh ginger
- handful fresh coriander leaves
- 1 red chilli
- 1 tablespoon fish sauce
- 1 tablespoon raw sugar
- 2 teaspoon ThermoFun Sweet Chilli Sauce (and extra for dipping once cooked)
- 250g chicken mince
- 30 wonton/dumpling wrappers
- 1000g boiling water from kettle
Instructions
- Place onion, lemongrass, ginger, coriander and chilli into TM bowl and chop 3 sec / speed 8. Scrape down.
- Add fish sauce, sugar, sweet chilli sauce and chicken mince and mix 1 sec / Turbo. Scrape down and repeat.
No need to wash TM bowl. - Oil Varoma trays to prevent sticking.
- Place 1 teaspoon of filling in wonton wrappers. Brush edges of wrapper with water (finger dipped in water works well!) and fold wrapper over in half. Press and crimp edges firmly to join and place on Varoma tray.
- Pour boiling water into TM bowl and place assembled Varoma onto TM lid and steam 15 mins / Varoma / speed 2.
- Serve with additional sweet chilli sauce.
