    Thermomix Chocolate ANZAC Cheesecake

    Now you have had the sneak peek on the ThermoFun Facebook page. I'm sure you have been to the shops to buy chocolate and bananas.  Honestly if you haven't, note the ingredients and get yourself to the shop.  You won't want to miss serving this one up to the family.  This Thermomix Chocolate ANZAC Cheesecake has a wonderfully delicious Anzac biscuit base, THEN a creamy chocolate and roasted banana filling.  Topped with almonds and every bite is heaven!

    Words of warning - make sure you have guests!  This should not be eaten alone!  You know that I love a good cheesecake and ANZAC biscuits so this was sure to be a winner.

    Thermomix Chocolate ANZAC Cheesecake

    Ingredients

    Ingredients - Anzac biscuit base

    • 80g butter, cubed, softened
    • 20g golden syrup
    • 100g plain flour
    • 90g brown sugar
    • 60g rolled oats
    • 50g coconut, desiccated or shredded
    • 1 teaspoon sea salt
    • ⅔ teaspoon bi-carb soda

    Ingredients - Topping

    • 250g dark chocolate melts
    • 2 small bananas, unpeeled
    • 500g cream cheese (room temp)
    • 150g brown sugar
    • 70g whole almonds, roasted
    • icing sugar, for dusting

    Instructions

    1. Preheat oven to 180°C. Line a 22cm spring form tin with baking paper.
    2. Place chocolate into TM bowl and chop 10 sec / speed 9. Set aside (for topping).
      No need to wash TM bowl.

    Method - Base

    1. Place butter and golden syrup into TM bowl and melt 1 min / 50°C / speed 3. Scrape down and repeat.
    2. Add flour, sugar, oats, coconut, salt and bi-carb and mix 20 sec / speed 4 / Reverse. Scrape down and repeat.
    3. Press into spring form tin. Bake for 15 mins.
    4. Place unpeeled bananas (for topping) onto a baking tray and place into oven at the same time as the Anzac base, remove and cool.
    5. Place almonds onto a baking tray and place into oven and roast 5 mins.
    6. Place roasted almonds into TM bowl and chop 2 sec / speed 5. Set aside.

    Method - Topping

    1. Place chocolate into TM bowl and melt 3 mins / 50°C / speed 1. Scrape down and melt a further 1 min / 50°C / speed 1.
    2. Add cream cheese and sugar and mix 1 min / speed 4. Scrape down.
    3. Add peeled bananas and mix 20 sec / speed 4. Scrape down and repeat.
    4. Pour onto cooled base. Top with almonds and dust with icing sugar.
    5. Place in fridge min. 6 hours.
