    Lamb Meatballs in Spicy Tomato Sauce - Week 37, 2015

    These meatballs are very easy and lovely served with the Spinach Rice recipe I gave you last week.

    There are so many options for these meatballs:

    • top the meatballs with some crumbled feta cheese.
    • use the meatball recipe as a burger patty and grill on BBQ/frying pan.
    • make small meatballs for finger food.
    • bake meatballs in the oven with or without the sauce on the side.
    • while meatballs are cooking in the Varoma you can steam bite size vegetables of choice in the simmering basket at the same time.
    • If you are only cooking for a couple of people you can place the meatballs on a tray lined with baking paper and place them in the freezer. When they are frozen store in a sealed container to have on hand for another meal.

    Lamb Meatballs in a Spicy Tomato Sauce

    Ingredients

    Meatballs

    • 1 slice bread, torn into quarters
    • small handful fresh mint leaves
    • small handful fresh parsley
    • 1 small onion, peeled and halved
    • 2 garlic cloves, peeled
    • 500g lamb mince
    • 1 egg
    • 10g TM vegetable stock concentrate
    • 1 teaspoon oregano dried
    • ¼ teaspoon cinnamon, ground
    • ¼ teaspoon pepper, to taste

    Spicy Tomato Sauce

    • 2 garlic cloves, peeled
    • 1 onion, peeled and halved
    • 20g olive oil
    • 2 x 400g cans diced tomatoes
    • 60g white wine
    • 20g TM vegetable stock concentrate
    • 20g ThermoFun Tomato Paste
    • ½ lemon, zest only - using microplane or grater
    • 1 teaspoon sugar
    • 1 teaspoon oregano, dried
    • ¼ teaspoon chilli powder, or to taste
    • ¼ teaspoon pepper, or to taste
    • parsley chopped, for garnish

    Instructions

    Meatballs

    1. Place bread, mint and parsley, onion and garlic into TM bowl and chop 5 sec / speed 5. Scrape down.
    2. Add remaining meatball ingredients and mix 10 sec / speed 5 / Reverse. Scrape down and repeat.
    3. Form the mixture into golf ball sized meatballs and place on both levels of Varoma (deep dish and tray) and set aside.
      No need to wash TM bowl.
    4. Tip: when rolling them, have wet hands - just a bowl of water on the bench and dip your hands in after every couple of balls.

    Spicy Tomato Sauce

    1. Place garlic, onion and oil into TM bowl and chop 3 sec / speed 5.
    2. Scrape down and sauté 5 mins / Varoma / speed 2 / MC off.
    3. Add remaining sauce ingredients except parsley.
    4. Place assembled Varoma containing meatballs on top of TM lid and cook 23 mins / Varoma / speed 1 or until cooked. NB: Cooking time will vary with size of meatballs.
    5. To serve: place meatballs onto plate, pour sauce over the top and garnish with parsley.

    Notes

      These were delicious. . Sauce a bit runny so used some cornflour to thicken a bit - maybe because I used home grown tomatoes instead of tinned. served over fettucine and zucchini noodles. The sauce would be great as a base for prawn sagenaki with fetta also.

      YUM. These are delicious and so easy!! They are on a regular rotation at my place. I use a tbs of gf flour in place of the bread. Any leftovers make for lovely lunch the next day too. Thank you for creating such great recipe :)
