This is an absolutely delicious Baba ghanoush recipe, it's one of our favourites at present!
Make sure you try it on hamburgers too.
Ingredients
- handful fresh parsley
- 2 garlic cloves, unpeeled
- 350g eggplant (approx. 2 medium)
- 1½ teaspoon soy sauce
- juice of 1 lemon
- 100g tahini
- olive oil, for drizzling
- sumac, to sprinkle
Instructions
- Preheat oven to 180°C.
- Place garlic and eggplant into a baking tray and drizzle with oil. Place into oven and bake 30-40 mins.
- Place parsley into TM bowl and chop 3 sec / speed 8. Set aside.
- Squeeze garlic out of skin and place into TM bowl with eggplant and chop 20 sec / speed 4. Scrape down.
- Add soy sauce, lemon juice and tahini and mix 20 sec / speed 4.
- Add parsley and stir through with aid of spatula.
- Serve drizzled with a little oil and a sprinkle of sumac.
