    Thermomix Greek Spinach Rice (Spanakorizo)

    This is such a simple Thermomix greek spinach rice, flavoured with dill and lemon. “Spanakorizo” is a Greek spinach rice side dish. There are many variations of this recipe sometimes served with feta cheese or an egg.

    Thermomix Greek Spinach rice with lemon

    Ingredients

    • 1 lemon, zest and juice
    • 900g boiling water from kettle
    • 40g TM vegetable stock concentrate
    • 300g basmati rice
    • 20g olive oil
    • 1 garlic clove, peeled
    • 1 onion, peeled and halved
    • 1 tablespoon cumin, ground
    • 250g frozen spinach, defrosted, drained and squeezed dry; or fresh spinach
    • ¼ teaspoon pepper
    • 2 tablespoon fresh dill, chopped; or fresh basil
    • handful roasted pinenuts - optional

    Instructions

    1. Place rice into simmering basket and rinse under cold tap until water runs clear.
    2. Place lemon rind into bowl and zest 5 sec / speed 10. Set aside.
    3. Pour boiling water into TM bowl and stock into TM bowl.
    4. Insert simmering basket and cook 18 mins / 100°C / speed 4.
    5. Place rice into pre-warmed ThermoServer and discard remaining water in the bowl.
    6. Add garlic, onion and olive oil and chop 3 sec / speed 4. Scrape down sides and sauté 5 mins / Varoma / speed 2 / MC off.
    7. Add cumin, lemon zest, lemon juice, spinach and pepper and cook 3 mins / Varoma / speed 1 / Reverse.
    8. With aid of spatula, combine spinach mix into the rice.
    9. Sprinkle with roasted pinenuts.

      We loved this rice. I served it with the Greek yoghurt marinated chicken - they complimented each other so well. Another successful dinner in our family.
