    Maple Sweetened Banana Muffins - Week 3, 2017

    Sometimes all you want is a fluffy muffin that you can grab everything off the pantry shelf, "throw it together" and voila you have a beautifully healthy muffin!  These Thermomix Maple Sweetened Banana Muffins are just that!  It's full of goodness, it's fluffy and moist and best of all you don't need to go to the shops for ingredients.  Well unless you're out of ingredients! :)

    This was a pot luck win recipe.  We had been travelling back from Melbourne after visiting friends.  We stopped into an old friend's house a little unexpected (we called but only 30 mins out) and arrived to these amazing little morsels of yummy!

    So before we left you can imagine - I had that recipe in my phone ready!  After much taste testing here it is :D

    thermomix-Maple-Sweetened-Banana-Muffins

    Ingredients

    • 70g coconut or olive oil
    • 150g maple syrup or honey
    • 2 eggs
    • 3 bananas, quartered
    • 70g milk of choice
    • 1 teaspoon ThermoFun Vanilla Bean Paste
    • ½ teaspoon salt
    • ½ teaspoon cinnamon + more for sprinkling on top
    • 270g plain flour
    • 1½ teaspoon bi-carb soda
    • 40g oats + ½ tablespoon for sprinkling on top
    • ½ teaspoon raw sugar for sprinkling on top
    • Optional extras: nuts, chocolate or dried fruit

    Instructions

    1. Preheat oven to 165°C. Grease a 12 hole muffin tray.
    2. Place oil, maple syrup or honey, eggs, bananas, milk, vanilla, salt and cinnamon into TM bowl and mix 10 sec / speed 6.
    3. Add flour, bi-carb and oats and mix 10 sec / speed 4 / Reverse. Scrape down and repeat.
      NB: If you’d like to add any additional extras, add them in now.
    4. Divide batter evenly between muffin holes, filling each hole about two-thirds full.
    5. Sprinkle tops of muffins with a small amount of oats, followed by a light sprinkling of sugar and cinnamon.
    6. Bake muffins 23 - 25 mins.
    7. Place muffin tin on a wire rack to cool.
    8. Enjoy muffins plain, or with a spread of regular or nut butter.
