Surfing the internet a while ago the name of this recipe certainly grabbed my attention! I'm a huge fan of lasagna, but putting it in soup well that I wasn't really convinced about! However, I found it so intriguing that I just had to try it! Well and am I glad I did! It even tastes like lasagna! The bow ties with the curl edges give the effect of the lasagna sheets and the ricotta and mozzarella are so similar to the taste of béchamel sauce in lasagna. This makes a huge amount so would easily feed 6 people. A real hearty meal in itself.

Ingredients
- 50g parmesan cheese, cubed
- 100g mozzarella cheese, cubed
- 3 garlic cloves, peeled
- 1 onion, peeled and halved
- 20g olive oil
- 2 teaspoon basil, dried
- 2 teaspoon oregano, dried
- ½ teaspoon chilli flakes
- 40g ThermoFun Tomato Paste
- 20g TM vegetable stock concentrate
- 1200g tomatoes, diced fresh or can
- 2 bay leaves
- 400g boiling water from kettle
- ground black pepper, to taste
- 500g Italian sausages
- 250g bow tie pasta
- fresh basil leaves to garnish (optional)
Ricotta Mixture
- 250g ricotta (room temp)
- salt and pepper, to taste
Instructions
- Place parmesan into TM bowl and grate 10 sec / speed 9. Set aside.
- Place mozzarella into TM bowl and grate 4 sec / speed 4. Set aside.
Ricotta Mixture:
- In a small bowl combine ricotta, parmesan, salt and pepper.
Lasagne Soup:
- Place garlic, onion and oil into TM bowl and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add basil, oregano, chilli flakes, tomato paste, stock, tomatoes, bay leaves and boiling water.
- Cook pasta in your ThermoServer Click Here for directions.
While your pasta is cooking, continue on to cook soup and sausages. - Place sausages onto Varoma tray and place assembled Varoma onto TM lid.
- Cook tomato soup and sausages 30 mins / Varoma / speed 1 / Reverse.
- When sausages are cooked cut into bite size pieces and add into TM bowl and mix with aid of spatula.
- Once pasta is cooked, place drained pasta into ThermoServer then pour tomato soup and sausages onto pasta and combine.
- Serve immediately with a large spoonful of ricotta mixture and sprinkle with mozzarella and fresh basil.
* Please note, the bowl is filled to the maximum 2 litre mark while cooking.

Awesome!! Cooked this tonight and everyone loved it. Its not really a soup, more like a pasta with sauce just isnt overloaded with pasta which is good. Very yummy highly recommended! :) :)
