This is such a beautiful warming soup for a winters night. So healthy and loads of flavour using my ThermoFun Curry Blend recipe.
Ingredients
- 2 garlic cloves , peeled
- 2cm fresh ginger
- 2 roots and stems fresh coriander
- 1 onion, peeled and halved
- 20g olive oil
- 400g tin tomatoes, diced (or equiv fresh)
- 800g boiling water from kettle
- 20g TM vegetable stock concentrate
- 80g ThermoFun Tomato Paste
- 80g crunchy peanut butter
- 1 tablespoon ThermoFun Curry Blend
- ¼ teaspoon cayenne pepper (optional)
- ¼ teaspoon black pepper
- 400g chickpeas, rinsed and drained
- 400g borlotti beans, rinsed and drained
- To serve , fresh coriander and a dollop of Greek yoghurt
Instructions
- Place garlic, ginger and coriander (reserving a few leaves for garnish) into TM bowl and chop 4 sec / speed 8
- Add onion and oil and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add remaining ingredients. Cook 12 mins / 100°C / speed 1 / Reverse
- Serve with coriander leaves and a dollop of Greek yogurt.
