I’ve never been a fan of pumpkin itself, but I do really enjoy a beautiful hot pumpkin soup – it does have to have bacon in it though in my humble opinion! Make sure you use the whole pumpkin – skin and seeds too!
Ingredients
- 1 garlic clove, peeled
- 1 onion, peeled and halved
- 3 rashers short cut bacon, quartered
- 600g butternut pumpkin, skin on, chopped into chunks
- 2-3 potatoes, quartered
- 1 leek, chopped into chunks
- 2 teaspoon nutmeg, ground
- 1 teaspoon coriander, ground
- 1 teaspoon cumin, ground
- 20g TM vegetable stock concentrate
- 300g boiling water from kettle
- 100g thickened cream
- To serve, sour cream and cracked pepper
Instructions
- Place garlic, onion and bacon into TM bowl and chop 4 sec / speed 8. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add pumpkin, potatoes and leak and chop 20 sec / speed 7. Scrape down.
- Add spices, stock and water and cook 20 mins / 100°C / speed 1.
WARNING: WHEN PUREEING HOT LIQUIDS FOLLOW THE DIRECTIONS IN YOUR THERMOMIX INSTRUCTIONS MANUAL. - Add cream and carefully blend 1 min, gradually increasing from speed 1 to speed 9.
- Serve in soup bowls and add a dollop of sour cream and cracked pepper to each serve.
