Anita, a ThermoFun Club Member is a great lover of Southern Comfort and we often have a laugh about this in the ThermoFunkies Club Facebook group. I converted this recipe with Anita in mind.
Funnily enough it actually doesn’t have any bourbon in it but I’m sure Anita could still have a glass with it!
Serving Size
Serves 4-6
Ingredients
- 2 garlic cloves, peeled
- 2cm fresh ginger
- 1 red chilli, deseeded
- 1 onion, peeled and halved
- 20g olive oil
- 800g chicken thighs, cubed
- 1 tablespoon cornflour mixed with a small amount of water
- 50g juice apple or orange
- 40g brown sugar
- 30g ThermoFun Tomato Paste
- 15g apple cider vinegar
- 80g soy sauce
- 1 small broccoli, cut into florets
- cooked rice to serve
Instructions
- Place garlic, ginger, chilli, onion and oil into TM bowl and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Insert butterfly into TM bowl.
- Add chicken and cook 5 mins / 100°C / speed 1 / Reverse.
- Add remaining ingredients, except broccoli and mix 8 sec / speed 2 / Reverse.
- Place broccoli in Varoma and place assembled Varoma onto TM lid and cook 12 mins / 100°C / speed 1 / Reverse.
- To serve, place chicken and broccoli on a bed of rice.
