It’s Mad Monday again! The first Monday of every month where I share with you a Thermomix recipe that is very quick, but also is popular and a great family meal.
This thermomix sundried tomato pesto is very versatile! It can be used as a delicious pasta sauce or a dip! With 6 basic pantry ingredients you can whip up a 'stir through' pasta sauce (add more olive oil) or serve this beautiful pesto with some cheese, cheese crackers or rosemary, parmesan crackers.
Ingredients
- 2 garlic cloves, peeled
- 45g parmesan cheese, cubed
- 20g fresh basil
- 160g cashews, unsalted
- 100g sun-dried tomatoes
- 30g olive oil
Instructions
- Place garlic and parmesan into TM bowl and chop 10 sec / speed 9.
- Add remaining ingredients and mix 10 sec / speed 6.
- Scrape down and mix 5 sec / speed 6.
This recipe was literally concocted whilst making my Chicken Pesto Roulade having a taste test before I added the cream cheese to the recipe! The roulade recipe was given to my ThermoFun Members in Week 23, 2015. Recipe available in my 2015 e-book
