There is really nothing better than cooking a "roast" chook in the Varoma of your thermomix - I mean check out these amazing recipes: TFC Chicken, Moroccan Chicken & Herbie & His Vego Friends! This thermomix roast chicken with chorizo and chickpeas is so delicious! It gives the meat a wonderful flavour that you really have to take a moment to stop shovelling - I mean eating it - to leave some for tomorrow's lunch! :)
I really enjoy watching cooking shows - just waiting for a time when I can just press a button and it all appears right in front of me .... until then - I shall continue to drool some more on the TV! An episode of "The Living Room" when they did this meal was no different - I was like wow I can do that - that would be sensational with my cajun spice mix, so off to the supermarket I went the next day! It really was a wow dish!
A few of my recipe testers now think that this roast chicken with chorizo and chickpeas is even better then my famous Herbie and His Vego Friends - so that does say a lot!

Ingredients
Chicken
- 1 large chicken (up to 2kg)
- 1 lemon, divided
- 1 tablespoon olive oil
- 4 teaspoon ThermoFun Cajun Spice Mix, divided
- salt and pepper, to taste
Stuffing
- 4 spring onions, quartered
- 2 chorizo, quartered
- 60g sun-dried tomatoes
- 1 tablespoon olive oil
- 400g can chickpeas, drained
- 1700g boiling water from kettle
Instructions
Chicken:
- Rinse chicken cavity and pat dry with paper towel. Set aside in Varoma deep dish.
- Mix in a small dish: juice of half a lemon, oil, 2 teaspoon cajun spice, salt and pepper.
- Pat and rub cajun mixture into skin of chicken.
NB: wear disposable gloves to prevent spices staining your fingers.
Stuffing:
- Place spring onions, chorizo, sun-dried tomatoes, oil and remaining 2 teaspoon Cajun Spice Mix into TM bowl and chop 5 sec / speed 5.
- Scrape down and cook 5 mins / Varoma / speed 2 / MC off.
- Add chickpeas and cook 1 min / Varoma / speed 2 / Reverse / MC off.
- Place stuffing into chicken cavity (if it doesn’t all fit, place remaining stuffing beside chicken in Varoma or it can be frozen to use next time). Place other half of lemon at the end of the cavity.
Tip: use toothpicks to pierce through lemon to hold in place if needed. - Pour boiling water into TM bowl and place assembled Varoma on top of TM lid and cook 60 mins / Varoma / speed 2.
- Check water level in TM bowl is adequate before proceeding.
- Remove Varoma from TM lid and set aside. Add hard vegetables eg: potatoes, pumpkin, and carrots into simmering basket and lower basket into TM bowl. Place assembled Varoma with chicken back onto TM lid and continue cooking
30 mins / Varoma / speed 2. - Add soft vegetables into Varoma around chicken and cook 8 mins / Varoma / speed 2.
OR remove chicken from Varoma and place into a baking dish and continue cooking in oven approx. 20-30 mins. This will give plenty of room to cook a large amount of vegetables in the Varoma if required.
Notes
If you want a gravy, pour some of the liquid over the meal. While not a 'gravy' it is delicious and adds some moisture to the meal.
• The cooking time will vary depending on the size of your chook.
• Keep an eye on water level in case TM bowl needs more during cooking time.
• Generally allow 30 minutes cooking per 500g of chicken.
• This does take a lot longer to cook than “Herbie” due to so much stuffing.
