I don't think soups get much better than creamy, sweet and utterly satisfying. This thermomix Chicken Sweet Corn Soup ticks all the boxes and more because we all know how easy a thermomix meal is. The flavour is really something else and I was only thinking the other night that a spice mix or a sprinkle of chilli would just help take it to the next level.
Don't mistake the fact that it isn't full of spices to mean that this is a bland soup. It has - dare I say it - a real depth of flavour that is beautiful all on its own. Make sure it's on your list of must do's this winter.
Ingredients
- 1 garlic clove peeled
- 1cm piece ginger
- 3 spring onions quartered
- 10g olive oil
- 400g chicken breast or thighs diced
- 420g can creamed corn
- 420g can corn kernels drained
- 700g boiling water from kettle
- 20g TM vegetable stock concentrate
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- ¼ teaspoon white pepper
- 2 tablespoon cornflour stirred into ¼ cup water
- 2 eggs whisked in small bowl with a fork
- garnish: thinly slice green tops of a spring onion
Instructions
- Place garlic, ginger, spring onions and oil in TM bowl and chop 3 sec / speed 8.
- Scrape down and sauté 3 mins / Varoma / speed 1 / MC off.
- Add chicken, corn, water, stock, soy sauce, sesame oil and white pepper and cook 15 mins / 100°C / speed 1 / Reverse.
- Set TM to 2 mins / 100°C / speed 2 and during the first minute, through the MC hole of the lid, slowly pour in cornflour mixture and then the beaten egg in a steady stream.
- Serve in soup bowls and garnish with spring onion.
Notes
This is delicious served with my cheese and bacon rolls

Yum yum yum! About the best chicken sweet corn soup I've tasted! I added some cooked strips of bacon as I had cooked too much for the ceaser salad we had after. So easy too.

I didn't have any creamed corn so, as I was halving the recipe (as it is only Kip and I), I halved the 420g tin of corn (scary that a 420g tin of corn only contains 260g of actual corn...) and made the creamed corn from the Cajun Creamed Corn recipe without the spices - worked really well. I replaced 50g of cream in that recipe with 50g of the water that the corn was canned in - just cos I didn't want to just tip it down the sink! (so only used 70g of cream)
As I halved the recipe, maybe I should have amended the cooking time to 10 mins in step 2. Was lovely but maybe a bit overcooked.
To circumvent the oldest child (ie. husband) saying it was bland (which it definitely was not) I mixed some chilli with soy sauce and sesame oil in a small bowl that could be added to the soup. We both added it but the soup was nice without it. This is great if you are cooking for a family with different spice needs?
1/2 the recipe served us with a bowl of soup and we each have leftovers for lunch...
