Tis still the season for soup and from what I hear most of the country is going to be blanketed in cold weather in the coming week, perfect time to indulge in this - Thermomix Leek, Chickpea & Chorizo Soup. Simple ingredients, but the chorizo just adds that little bit of spice and extra flavour that has the soup going to another level!

I would have to say for ease of Thermomix use, soups has to be the hands down winner! What do you think? I really enjoy just throwing everything in the bowl and walking away to come back to a beep to tell me it's time to eat, eat, eat! :D
But I think the best part about soup - it never seems to "fill you up" so you get to indulge in a little dessert - What will you be having? Oh okay here is some inspiration - Desserts!
Inspired from a recipe I saw on Taste.com.au.
Ingredients
- 2 leeks, quartered
- 1 garlic clove, peeled
- 20g olive oil
- 750g chicken stock
- 600g potatoes, peeled, cut into 2cm pieces
- 1 chorizo, finely chopped
- 400g can chickpeas, drained
- salt and pepper, to taste
- 2 tablespoon fresh chives, chopped to serve
Instructions
- Place leek, garlic and oil into TM bowl and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add stock and potato and cook 20 mins / 100°C / speed 1 / Reverse.
- While soup is cooking - in a frypan cook chorizo until crispy and drain on a paper towel or wrap in a paper towel and cook in microwave for 3 mins.
- Add chickpeas, salt and pepper and mix 10 sec / speed 1 / Reverse.
- Pour half the soup into a pre-warmed ThermoServer.
WARNING – WHEN PUREEING HOT LIQUIDS FOLLOW THE DIRECTIONS IN YOUR THERMOMIX INSTRUCTIONS MANUAL.
- Puree remaining soup in TM bowl carefully by increasing the speed
slowly 1 min / speed 9. - Pour into ThermoServer and stir to combine.
- Serve topped with chorizo and chives.
Notes
Not all of the soup will be pureed so cut potatoes neatly!
