    Chorizo & Mushroom Spiced Risotto - Week 33, 2017

    Here I am again with my favourite ingredient - CHORIZO!  I think I should just move to Spain or Portugal! :D  I'd be able to dine on Chorizo ALL DAY!   Okay back to reality!  This thermomix chorizo mushroom spiced risotto is a simple, delicious dish that will fill up the family.

    IF and I say this in the most loose term - IF you have any left overs make them into Arancini balls.

    The curry blend and the spices of the chorizo with a hint of tomato just makes this dish so wonderfully balanced!  Remember you can adjust the "hotness" of the dish for those that like a little hit with adding more curry blend.

    Chorizo & Mushroom Spiced Risotto – ThermoFun

    thermomix-Chorizo-And-Mushroom-Spiced-Risotto

    Ingredients

    • 1 garlic clove, peeled
    • 1 onion, peeled and halved
    • 6 rashers bacon, short cut, quartered
    • 250g chorizo, sliced
    • 1 tablespoon ThermoFun Curry Blend
    • 30g ThermoFun Tomato Paste
    • 30g TM vegetable stock concentrate
    • 300g arborio rice
    • 1000g boiling water from kettle
    • handful fresh coriander, roughly chopped
    • handful fresh parsley, roughly chopped
    • 6 mushrooms, sliced

    To Garnish:

    • 1 spring onion, sliced into rings

    Instructions

    1. Make ThermoFun Curry Blend and set aside.
    2. Place garlic, onion and bacon into TM bowl and chop 3 sec / speed 5.
    3. Add chorizo and cook 5 mins / Varoma / speed 1 / Reverse / MC off.
    4. Add 1 tablespoon curry blend, tomato paste, stock, rice, boiling water and cook 20 mins / 100°C / speed 1 / Reverse.
    5. Add coriander, parsley and mushrooms and mix with aid of spatula. Cook 5 mins / 100°C / speed 1 / Reverse.
    6. Pour into pre-warmed ThermoServer and allow to stand for 5 mins.
