Moving interstate... so a mad clean out of cupboards, let's not take anything from the pantry! Famous last words when you're moving house! So what happens when you have this amazing recipe from one of my lovely members, Kirrilly, that's for a 'short notice slice' but you have no mixed fruit! Well you just swap a couple of things out and throw the seeds in instead and VOILA! Nothing left in the pantry for the move! ;)
In all seriousness, I did have the keys in my hand to go to the supermarket and get some mixed fruit to whip up a slice for the removalists but in the end I thought "well we will only see these removalists once in my life so if they don't like it well ....." the end result was it can't have been too bad as there was nothing left on the plate by the afternoon! Since then I've tweaked this recipe many times and every time it has been absolutely delicious!

Ingredients
- 50g honey
- 170g butter, cubed
- 250g self raising flour
- 150g raw sugar
- 70g coconut, shredded
- 2 eggs
- 90g sultanas
- 90g walnuts
- 60g pepitas
- 60g sunflower seeds
Instructions
- Preheat oven to 170°C. Line a slice tin with baking paper.
- Place honey and butter into TM bowl and cook 3 mins / 50°C / speed 3.
- Add flour, sugar, coconut and eggs and mix 15 sec / speed 4.
- Add remaining ingredients and mix 20 sec / speed 3 / Reverse.
- Spread into tin and bake 18-20 mins.
- Allow to cool in tin.
