This thermomix pear and parsnip soup does NOT need any long winded introduction! You just need to cook it, sit down and enjoy it! All my taste testers have come back saying how wonderful it is!
One taste tester emailed me saying she even served it up to her parsnip hating friend!
"F#@kin' unreal. Never thought that I would eat this - never, ever, ever. Then asked if she could have the leftovers for a dinner she is having tomorrow night."
and another one:
"Blown away as I hate parsnips and haven’t had them in my house for 30 years!!"
So as you can see this one was a winner among a few households! Let me know what you think of it.
Oh and serve this up with some extra toasty crusty bread - because you will want to be licking the bowl clean! :D
Inspired by Local-Lovely

Ingredients
- ½ teaspoon fennel seeds
- 1 leek, cut into chunks
- 20g olive oil
- 1 pear, peeled and quartered (or 1 Granny Smith apple)
- 3 parsnips, peeled, cut into chunks
- 500g chicken stock
- 200g cream
- salt and pepper, to taste
- walnuts, crumbled
Instructions
- Place fennel seeds into TM bowl and roast 3 mins / Varoma / speed 1.
- Add leek and oil and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add pear and parsnips and chop 10 sec / speed 8.
- Add stock and cook 20 mins / Varoma / speed 1.
WARNING – WHEN PUREEING HOT LIQUIDS FOLLOW THE DIRECTIONS IN YOUR THERMOMIX INSTRUCTIONS MANUAL. - Carefully blend 1 min / speed 9 gradually increasing speed from speed 1 to speed 9.
- Add cream, salt and pepper and mix 15 sec / speed 3.
- To serve, ladle soup into serving bowls. Sprinkle walnuts on top and drizzle with olive oil (optional).
