This thermomix chicken bombay salad is the perfect dish for those hot summer days, when you want a little spice but it to be a nice cool salad. Also a great addition to the lunchbox for the young or old ones :D AND it has the beautiful ThermoFun Curry Spice :D A little India in your own backyard! :)
If you don't want to do shredded chicken, this is an awesome little side salad for grilled:
- chicken
- lamb
- beef/steak

Ingredients
Salad
- 300g shell pasta
- 500g cooked chicken breast or thigh
- 4 spring onions, sliced finely
- 1 cup raisins
- 1 carrot, chopped by hand
- 12 cherry tomatoes, halved
- handful snow peas, sliced
Dressing
- 300g mayonnaise
- 2 teaspoon ThermoFun Curry Blend
- 1 teaspoon cumin, ground
- salt and pepper, to taste
- 10g lemon juice
Instructions
Salad
- Cook pasta in your ThermoServer Click Here for directions.
When pasta is cooked, rinse with cold water and drain. Place pasta into a large salad bowl. - Prepare ThermoFun Curry Blend and set aside.
No need to wash TM bowl. - Cook and shred chicken.
- Add chicken into salad bowl with pasta.
No need to wash TM bowl.
Dressing
- Make mayonnaise.
- Add remaining dressing ingredients and mix 20 sec / speed 5.
- Pour dressing onto pasta and chicken and toss well to combine.
- Add to salad bowl: spring onions, raisins, carrot, cherry tomatoes and snow peas. Toss well to combine.
- Refrigerate for at least 1 hour for all the flavours to develop.

I adapted this dish tonight to what I had in the fridge as I had a craving for pasta salad, but I still made the dressing as I already had Mayo in the fridge & even some shredded chicken. It was delicious.
