I've enjoyed apricot chicken for as long as I can remember. However I wanted to create a recipe that didn't need a can of apricot nectar or a packet of french onion soup mix. I eventually found one on the The Healthy Chef blog and converted it to be made in the Thermomix. We all really enjoy this recipe while apricots are in season and when apricots cannot be found it works well using dried apricots. Enjoy! :)
Ingredients
- 4 ripe apricots, halved, stone removed
- 2 onions, peeled and halved
- 20g olive oil
- 800g chicken thigh fillets, cubed
- 20g TM vegetable stock concentrate
- 150g boiling water from kettle
- 100g whole fruit apricot jam
- 2 teaspoon cornflour
- grinds of black pepper
- rice, to serve
- vegetables to serve (optional)
Instructions
- Place apricots into TM bowl and puree 10 sec / speed 8. Set aside.
- Place onion and oil into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Insert butterfly. Add chicken, stock, boiling water, jam, apricot puree and pepper and cook 12 mins / 100°C / speed 1 / Reverse / MC off, placing simmering basket onto TM lid to prevent spatter.
- Add cornflour and cook 5 mins / 100°C / speed 1 / Reverse / MC off, placing simmering basket onto TM lid to prevent spatter.
- Serve over rice with vegetables on the side.
Notes
When apricots are out of season – use 12 dried apricots. Soak in combined stock and water (extra) then blend together until smooth. This will develop a lovely apricot base for the whole dish.
