    Macaroni Salad - Week 2, 2015

    Is ham and salad a summer standard in your house like it is in ours?  I reckon there's nothing better on a hot day when you don't want to cook!  We have finally had a bit of summer in Sydney so we decided to have this regular stand-by.  Rather than boring ol' sliced ham and garden salad, I decided to spruce it up a bit with left-over Christmas Ham with "Jamie's Jerk Ham Glaze" (I'm saving that recipe to share with you for next Christmas, or maybe Christmas in July) :) and two yummy salads, Risoni Salad and this delicious Macaroni Salad.  The combination of vegetables and mayo is wonderfully refreshing.  Enjoy!  :)

    Ingredients

    • 250g pasta, elbows or spirals
    • 180g mayonnaise
    • 40g white vinegar
    • 20g Dijon mustard
    • 1 teaspoon sugar
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 1 celery stalk, sliced
    • 1 green capsicum, diced
    • 1 red capsicum, diced
    • 3 spring onions, sliced
    • 1 cucumber, diced
    • 420g can sweet corn, drained

    Instructions

    1. Click Here for directions to cook pasta in your ThermoServer.
    2. Drain cooked pasta and place into a large salad bowl.
    3. Make mayonnaise
    4. Pour mayonnaise into a jar to store in fridge.
      No need to wash TM bowl.
    5. Add 180g mayo, vinegar, mustard, sugar, salt and pepper into TM bowl and mix 3 sec / speed 7.
    6. Add celery, capsicums, spring onions, cucumber and corn to salad bowl.
    7. Pour mayonnaise dressing into salad bowl and mix with spatula until well combined.

      This so quick n yummy I added carrot n a yellow, instead of green, capsicum as that's what I had in the fridge. I love what my 17yr old said to me ' dinner looks colour full mum.' He really does eat with his eyes lol! I grilled some crumbed lamb cutlets to go with the salad n in 30 minutes dinner was done. Thanks for another quick easy dinner.
