When Monday night rolls around and you want something simple and delicious you really can't go past a slice, quiche, or frittata. This thermomix zucchini and bacon slice is another one to add to your must haves. It's great the next day for lunches as well! If you're LCHF leave out the carrot and voila - another delicious meal added to your menus. :)

Ingredients
- 150g cheese, cubed
- 1 garlic clove, peeled
- 3 spring onions, quartered
- 300g zucchini, quartered
- 200g carrot, quartered
- 100g short cut bacon, quartered
- ground pepper, to taste
- 6 eggs
- 150g sour cream
Instructions
- Preheat oven to 180°C. Grease a rectangle (approx. 20x30cm) casserole dish.
- Place cheese into TM bowl and grate 10 sec / speed 9. Set aside.
- Place garlic and spring onions into TM bowl and chop 3 sec / speed 8.
- Add zucchini, carrot, bacon and pepper and chop 4 sec / speed 5. Spread into casserole dish.
No need to wash TM bowl. - Place eggs and sour cream into TM bowl and mix 8 sec / speed 5. Pour over zucchini in dish.
- Sprinkle cheese on top and bake for 45 mins.
- Allow to rest for 5 mins before cutting.

This is my go to flavoursome quick and easy slice. It’s versatile too. I sometime leave the carrots out and use extra zucchini. I also substitute yoghurt for the sour cream. I do add about a tablespoon of flour to keep it firm. I like to put fresh crumb of bread on top too. Blitz a few slice of bread before making the recipe and put aside then sprinkle on top before baking.

I have this in the oven as we speak, looking forward to trying it.
I am dairy free so have used:

2) Primal Kitchen Mozzarella Style Shreds https://www.primalkitchen.com.au/our-dairy-free-cheese/
It wont have that amazing brown melted cheese look but if the smell is anything to go by its going to be wonderful!
I may have also grated the zucchini first and put it aside to 'drain' after reading the above comments as I didn't have to grate cheese as my version was already grated.

This is great. I added 2 tablespoons fresh breadcrumbs and it was nice and light. I used fresh cream soured with 1/2 teaspoon white vinegar instead of the sour cream and it was fine. Tastes wonderful and I am lucky enough to have a slice for lunch today (you have to be quick in our house with midnight snackers around) ....

Tastes great! But it was very wet, there was a heap of water in the bottom of the dish once I had cooled it and taken out of oven. Did anyone else find this? Is it from the zucchini?

Hi Jessica - I'd say it definitely was from the zucchini - sadly some can be a lot more watery than others. I do find it absorbs the liquid if taken out of the oven and dish sits on the bench for at least 10-15 mins prior to slicing it.

This sounds delicious and would be great made in mini-loaf sizes for school lunches. Do you know if they defrost well - will they go soggy? What would be the best way to freeze?

I have frozen leftovers for my hubby to take to work in plastic containers. Hubby said it freezes good enough for his lunches, but my 19 year old DD disagrees! lol It may be a case of trial and error for you. Let me know how it goes.
