    ThermoFun - MAD MONDAY - Pasta with Creamy, Tomato and Bacon Sauce Recipe

    It’s Mad Monday again! The first Monday of every month where I share with you a recipe that is very quick, but also is popular and a great family meal.

    This is such a quick and easy recipe – I’m trying to perfect similar recipes that we can buy already made in jars. This one is getting pretty close to one of the commercial ones that was a family favourite of ours before I had a Thermomix.

    ThermoFun – MAD MONDAY – Pasta with Creamy, Tomato and Bacon Sauce Recipe

    Ingredients

    • 40g parmesan cheese, cubed
    • 1 red chilli, deseeded
    • 2 garlic cloves, peeled
    • 1 onion, peeled and halved
    • 4 bacon rashers, quartered
    • 20g TM vegetable stock concentrate
    • 400g can tomatoes, diced
    • 400g boiling water from kettle
    • 350g pasta, large penne or spirals
    • 300g thickened cream

    Instructions

    1. Place cheese into TM bowl and chop 10 sec / speed 9. Set aside.
    2. Place chilli, garlic, onion and bacon into TM bowl and chop 5 sec / speed 5.
    3. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
    4. Add stock, tomatoes, boiling water and pasta and cook 8 mins / 100°C / speed soft / Reverse.
    5. Add cream and cook 5 mins / 100°C / speed soft / Reverse.
    6. Pour into ThermoServer and allow sauce to rest for 5 mins before serving (this allows the pasta to soak up any excess liquid).
    7. Garnish with parmesan cheese.

      This is the second time I’ve made this dish for my 17 year old son and his mate. They love it! My son’s friend says it’s the best pasta dish he’s had outside of Italy.

      This looks perfect for an upcoming make ahead caravanning trip. Can I use fresh pasta and if so how would I amend the recipe?

        Kelly, fresh pasta usually takes approx. 1-3 mins, so rather than cook for 8 mins in step 4 just cook it for 1-3 mins. Ensure you use boiling water from your kettle in step 4 too. Test the pasta is cooked to your liking and Enjoy! :)

      Hi, I was hoping to add chicken as my meat loving husband said the bacon wasn’t quite enough last time (perfect for me though) when would you add the chicken? Would you have to cook for any longer? Thanks in advance

        Hi Kirsty, If the chicken is raw I would add it when you add the boiling water etc at step 4 and cook for 10 mins rather than 8. If the chicken is already cooked I'd add it with the cream just to heat it up. Let me know how you go. :)

      Will single cream work instead of the thickened cream? Want to give this a go as it's seems quick and easy but only have single cream! Thanks.

        I used single cream. Only used 220g and it was plenty! Worked a treat, tasted lovely! Thanks for the recipe.

      I was so tempted to get take away tonight but then I found this and am so glad I made this instead! Was so quick and easy and fed my whole family of 5 who loved it. I didn't have chilli so added a tablespoon of veggie stock paste instead. Thanks will be making again and again.

      Have just made this, topped with cheese and baked.
      Amazing as always!
      Will whip up another batch for a quick, easy meal during the week.
      Also added some extra veg to hide in the sauce.
      Another favourite in this house :)

      This was so yummy I reduced the chilli as my boys don't like things to spicy, and used a bit less of everything and it was just the right amount for the 4 of us. I also only had fresh cream it was still delicious. Thanks Leonie for a brilliant easy quick mad Monday recipe on my mad Wednesday night LOL! :)

      I would love to make this but without cooking the pasta with the sauce. Would I still cook it for the same amount of time or should I reduce the cooking time?

        Melissa you could definitely reduce the cooking time. Take off the 8 minutes in one of the steps.

      Hi, looking for a quick meal on a late day at the office I made this but just as a sauce to go on pre cooked tortellini. I just left out the water and the pasta.... Yummy and now it will be a go to for me.

      This was so yummy! Just made it for a quick dinner, I had all the ingredients on hand and usually do, I think this will become part of our family dinners for sure!! Miss 3 and hungry manual working partner both gobbled it up. Partner suggested some meat in it next time (of course!) so I think I will add some chicken next time. Also some extra veg at the onion and bacon chopping stage to make use of the sauce. I am loving this website!!!

      Used this as inspiration, we love the ricotta gnocci from thermomix vegetarian cookbook, but was looking for a different sauce tonight. So added mushroom and capsicum, left out water and yumm.

      Made this tonight, there was no tinned tomatoes in the cupboard so I skinned some fresh tomatoes instead.Also added some fresh herbs very easy and quick to make and tasted delicious. Thanks Leonie for another thumbs up recipe from my family,they loved it.

      Made this tonight in my Thermochef - yummo!!! Thank you for the recipe - was a big hit in my home. The only thing I would suggest with anyone with a Thermochef is use the butterfly bar after the sauteing.

      This looks great. We are vegetarian so I would attempt a bacon free version. Also, there's five of us, with healthy appetites, any suggestions on how to tweak the ingredients for a greater quantity?

        Sarah - I'd add more cream and more pasta. And as you are not wanting to use bacon I'd throw in your favourite herbs. :)

            Sarah I made this again last night to test it with larger quantities for you. I have now amended the recipe so it will feed a family of 5-6. If you want it to go even further, it goes really well with a lovely salad too! :)
