About 10 years ago a very good friend named Paula first made this Salmon Cheese Kig for me. I wrote her recipe down and have now converted it to be made in the Thermomix. This makes a large quantity so it is perfect for a large group. It is lovely served as part of a cheese board selection or spread on cucumber slices for party nibbles.
Ingredients
- 250g cream cheese, softened
- 400g can salmon, drained
- 1 tablespoon lemon juice
- 1 batch of ThermoFun French Onion Soup Mix
- 50g flaked almonds
Instructions
- Place all ingredients into TM bowl (except almonds) and mix 5 sec / speed 8. Scrape down and repeat.
- Place on a sheet of foil and shape into a log (approx. 25cm long).
Optional: cut the log in half if two smaller logs are preferred. - Place in fridge overnight.
- Toast almonds in fry pan or an oven and once cooled place almonds on sides and top of salmon log.
- Serve with crackers or an assortment of cheeses.
