    Salmon Nicoise - Week 45, 2015

    This is a really lovely and healthy salad especially enjoyable on a warm summers evening.  It is a great recipe for those that feel they are not using their Thermomix to its full potential as it demonstrates using the whole Thermomix for the entire meal!   Making a dressing in the bowl, cooking eggs in the simmering basket, steaming salmon and vegetables in the varoma.  Nothing else is needed!

    If you are a first time Varoma user, a tip for you is:  the varoma lid is great for resting the Varoma trays onto to catch water drips etc for example in step 3.  This prevents your kitchen bench from getting quite wet or messy from whatever is in the varoma!

    Thermomix Salmon Nicoise

    Ingredients

    Dressing

    • 1 lemon, zest only
    • 1 tablespoon fresh thyme leaves, remove hard stems
    • 2 tablespoon white wine vinegar
    • 1 tablespoon seeded mustard
    • 70g olive oil
    • 1 teaspoon honey
    • 1 teaspoon salt
    • ½ teaspoon white pepper

    Salad

    • 500g sweet potato, diced into 2cm cubes
    • 1000g boiling water from kettle
    • 4 salmon fillets (approx. 140g each)
    • 250g green beans, top and tailed
    • 4 eggs
    • ½ small red onion, thinly sliced
    • 1 bunch parsley, roughly torn, remove main stems

    Instructions

    1. Place all dressing ingredients into TM bowl and mix 20 sec / speed 5. Scrape out dressing into a bowl and set aside.
      No need to wash TM bowl.
    2. Pour boiling water into TM bowl. Place sweet potato onto Varoma tray and place assembled Varoma onto TM lid and cook 10 mins / Varoma / speed 2.
    3. Place eggs into simmering basket and lower into TM bowl.
    4. Place salmon into deep Varoma dish and scatter green beans on top of sweet potato.
    5. Place Varoma back into position and continue cooking 10 mins / Varoma / speed 2.
    6. Refresh the beans and sweet potato by giving them a quick rinse under cold water. Allow them to drain and continue cooling in the Varoma tray while you prepare other components of the salad.
    7. Rinse the eggs under cold water and peel.
    8. Place parsley, onion, sweet potato, green beans and ⅔ of the dressing into a large salad bowl and toss well.
    9. Divide the salad onto 4 serving plates. Cut each egg into quarters and salmon into 5-6 slices and position on top of each salad.
    10. Drizzle remaining dressing on top of each.

      Made the Salmon Nicoise tonight - absolutely delicious !! I used normal potatoes instead of sweet potato - they just needed slightly longer to cook . Also added asparagus in the top level in the last 3 minutes of cooking , and some salad leaves added at the end . My vegetarian daughter enjoyed it without the salmon . All in all an excellent , easy , healthy & tasty meal :-)
