We really enjoy entertaining in summer as it's usually great weather for a BBQ. When we do I like to serve a variety of salads. This recipe I saw on taste.com and thought I would give it a go.
By the time I made it (which in Thermomix time!) was in a flash, I realised that this could be a great lunch for Steve to take to work. So I ended up doing the recipe again and added some shredded chicken and lunch was done in a jiffy! :)
Ingredients
- 800g can chickpeas, drained and rinsed
- 45g olive oil, divided (10g + 35g)
- salt and pepper, to taste
- ½ small red onion, peeled
- 40g lemon juice
- 1 teaspoon ThermoFun Moroccan Spice
- 1 teaspoon caster sugar
- 3 large fresh tomatoes, diced
- 50g rocket
- 1 tablespoon currants
Instructions
- Preheat oven to 200°C. Combine chickpeas and 10g oil in a shallow baking tray. Season with salt and pepper. Bake 20 mins or until golden. Set aside to cool.
- Place onion, lemon juice, spice mix, sugar and 35g oil into TM bowl and mix 3 sec / speed 5.
- Place cooled chickpeas into a large bowl. Add tomatoes, onion, rocket and currants.
- Drizzle with dressing just before serving. Toss to combine.
