This thermomix cheesy polenta, is such a versatile dish! You can use other herbs like Rosemary or Basil. You can stir through chopped up sun-dried tomatoes, olives, or feta cheese, etc. It can be served as is using a big spoon to scoop up, a little like mashed potato so it's nice served with something saucy.
Or you could allow it to cool and set and cut it into squares or fingers. These can be pan-fried or oven baked so that they crunch up on the outside. Baked cheesy polenta 'chips' are great to make if you have leftovers the next night.
So many ways to "dress it up" if you feel the need to do something fancy or just leave as is for a great accompaniment to your dinner protein.
Ingredients
- 100g parmesan cheese, cubed
- 60g tasty cheese, cubed
- handful parsley
- 700g boiling water from kettle
- 300g milk
- 20g TM vegetable stock concentrate
- 250g polenta (weighed prior to cooking)
- 70g butter, cubed
- grinds of pepper
Instructions
- Place both cheeses and parsley in TM bowl and grate 10 sec / speed 9. Set aside.
- Pour boiling water, milk and stock in TM bowl and cook 8 mins / Varoma / speed 2.
- Set TM 3 mins / Varoma / speed 2 and while blades are moving, add polenta in a steady stream through hole in TM lid.
- Add cheeses, parsley, butter and pepper and mix 20 sec / speed 5. Scrape down and repeat.
- Pour into a shallow casserole dish for it to set.
NB: Pour it ALL out of TM bowl ASAP as it starts to set very quickly.
Wash TM bowl as soon as possible.
