Oh my what a week! I hope that everyone is coping with the cold weather. Never fear Leonie is here with another winter warmer! Thermomix sweet potato, tomato & chickpea soup is certainly a winner. Yes I know I am always saying a recipe is a winner, but you know me - I don't publish them unless they are winners (excluding any that contain broccoli - ewwwww that can be a winner for someone else's family!!!) lol! ;)
This sweet potato, tomato and chickpea soup is a very filling meal and always great for meatless monday or when you need to go shopping for groceries! Or you just need to tighten up the budget and make things count! Oh and it's meant to be a figure friendly recipe - so that means ..... more CHOCOLATE! :)
Thanks to Trish for asking me to convert this recipe from Independent.ie I did laugh at the figure friendly title and knew straight away that the Funkies would be all over this recipe so that they can enjoy a little chocolate afterwards! :)

Ingredients
- 1 onion, peeled and halved
- 20g olive oil
- 500g sweet potato, diced
- 400g tomatoes, diced, fresh or can
- 850g boiling water from kettle
- 20g TM vegetable stock concentrate
- 50g ThermoFun Tomato Paste
- 1 teaspoon cinnamon, ground
- ½ teaspoon lemon juice
- 400g tin chickpeas, drained
- grinds of pepper, to taste
- To serve: dollop of cream or sour cream on top of each serve
Instructions
- Place onion and oil into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add sweet potato, tomatoes, water, stock, tomato paste and cinnamon and cook 20 mins / 100°C / speed 1.
- Add lemon juice.
WARNING: WHEN PUREEING HOT LIQUIDS FOLLOW THE DIRECTIONS IN YOUR THERMOMIX INSTRUCTIONS MANUAL. - Carefully blend 1 min, gradually increasing from speed 1 to speed 9.
- With aid of spatula stir through chickpeas and season to taste.
- Serve into soup bowls with a dollop of cream on top.

Another yum soup that satisfies on a cold winters day. I made it before going to work and will use it for lunches. I didn't have any tomatoes so used your Passata recipe instead Leonie. A quick and easy recipe.
