I LOVE making soups as they are just so quick and easy. I'm loving my Laksa Paste which I'm using now in all sorts of things to add a great flavour boost.
Ingredients
- 400g coconut milk
- 1 batch ThermoFun Laksa Paste
- 1 onion peeled and halved
- 10g olive oil
- 1 medium sweet potato peeled cubed
- 2 medium carrots quartered
- 30g TM vegetable stock concentrate
- 750g boiling water from kettle
- 100g dried red lentils
- 1 tablespoon lime juice
Instructions
- Make coconut milk and set aside. No need to wash TM bowl.
- Make ThermoFun Laksa Paste.
- Add onion and oil and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1.
- Add sweet potato, carrots, stock, boiling water, lentils, and lime juice and cook 20 mins / 100°C / speed 1.
- Blend soup 1 min / speed 9 gradually increasing from speed 1 to 9.
- Add coconut milk and mix 15 sec / speed 4.

How much red curry paste would i use instead of the Laksa Paste?

I would suggest 1 tablespoon - but seriously next time you make it give the paste a go. It's amazing! :)
