This Thermomix Aloo Matar is a beautiful and hearty vegetarian curry dish. 'Aloo' means potato and 'matar' means pea, hence potato and pea curry. Many thanks to Kirsty, a ThermoFun Member who asked me if I could convert an old family favourite of theirs.

Ingredients
- 2 onions, peeled and halved
- 2cm ginger
- 1 garlic clove, peeled
- 30g olive oil
- 250g ThermoFun Passata
- 100g water
- 1½ teaspoon ThermoFun Garam Masala
- 1½ teaspoon paprika
- 1 teaspoon raw sugar
- 1 teaspoon salt
- 2 tablespoon chopped fresh coriander
- 1 bay leaf
- 4 large potatoes, peeled and diced
- 100g frozen peas
Instructions
- Place onion, garlic, ginger and oil into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 2 / Reverse.
- Add passata, water, garam masala, paprika, sugar, salt, bay leaf and coriander. Insert simmering basket and place in potatoes. Cook 15 mins / 100°C / speed 2 / Reverse.
- Empty potato into TM bowl and stir with spatula to coat potatoes with the curry mixture.
- Add frozen peas and cook 10 mins / 100°C / speed 1 / Reverse.
