You may be thinking soup in spring - but the seasons are certainly out of whack in the southern states of Australia! 13 degrees all day for most of this week! WHERE IS SPRING!?!?!?!?! So this thermomix cajun potato lentil soup is perfect for when the weather decides that it's still very cold!
Another great bonus to this recipe is that it's a super economical budget buster, but don't let it fool you, it packs a punch of flavour and they won't even realise it's vegetarian! This is a very thick and chunky soup which makes it a meal in itself for those lazy nights!
IF you have a protein eater then I think a good serve of chicken would just hit the spot with this! Either some shredded chicken or a steamed piece of chicken.
And just to boost up the Cajun :D add in some chorizo, pan fry and use as a garnish when serving! Oh and as always - good crusty bread is a MUST! :)

Ingredients
- 2 teaspoon ThermoFun Cajun Spice Mix
- 2 garlic cloves, peeled
- 1 onion, peeled and halved
- 1 red chilli, deseeded
- 1 green chilli, deseeded
- 20g olive oil
- 100g red lentils
- 1 tablespoon paprika
- 1 teaspoon thyme, dried
- salt and pepper, to taste
- 30g TM vegetable stock concentrate
- 900g boiling water from kettle
- 800g potatoes, peeled and cut into 2.5cm cubes
- garnish: fresh parsley, chopped
- Optional: 1 chopped chorizo, pan fried and use as garnish on top of each soup bowl when served.
Instructions
- Make Cajun spice mix and set aside.
- Place garlic, onion, chilies and oil into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add lentils, 2 teaspoon Cajun spice, paprika, thyme, salt, pepper, stock and boiling water.
- Place potatoes into simmering basket and insert into TM bowl.
- Cook 25 mins / Varoma / speed 1 / Reverse.
- Tip potatoes into TM bowl and stir through with spatula.
- Serve in soup bowls and sprinkle with parsley and chorizo if using.
