brrrrrr it's winter and it's freezing here in Sydney! I LOVE making soups in the Thermomix as they are just so quick and easy. Soups freeze really well, so any leftovers I freeze in individual servings which are very handy to always have on hand.
I'm loving my Laksa Paste which I'm using now in all sorts of things to add a great flavour boost.
Ingredients
- 400g coconut milk
- 1 batch ThermoFun Laksa Paste
- 900g butternut pumpkin, chopped into chunks
- 30g TM vegetable stock concentrate
- 750g boiling water from kettle
- 100g dried red lentils
- 1 tablespoon lime juice
Instructions
- Make coconut milk and set aside.
No need to wash TM bowl. - Make ThermoFun Laksa Paste.
- Add pumpkin, stock, boiling water, lentils and lime juice and cook 20 mins / 100°C / speed 1.
WARNING: WHEN PUREEING HOT LIQUIDS FOLLOW THE DIRECTIONS IN YOUR THERMOMIX INSTRUCTIONS MANUAL. - Carefully blend 1 min, gradually increasing from speed 1 to speed 9.
- Add coconut milk and mix 15 sec / speed 4.

This was super easy and delicious! I cheated and used 2 TBS of store bought laksa paste but made my own coconut milk (thanks for the tip! Was super easy). I used half pumpkin and half sweet potato - didn’t even peel them. Had this delicious soup ready in 25 mins. Thanks.

Hallo, Fancy giving this one a try, but have 2 questions: 1. In the laksa paste recipe "Fish Sauce" is called for, but the recipe says it is vegetarian, I am vegetarian, so, what do you suggest I use instead?
2. Details are not given for the preparation of the Butternut Squash, However, in the opening coments, it is suggested that we use the peal and seeds, so, do i just wash and cut up the squash as is?

Sandy, I would suggest Worcestershire sauce or soy sauce in place of the fish sauce.
And yes just give the pumpkin a wash and a wipe with a damp cloth before cutting. Enjoy! :)
