Our family loves curries - so this Thermomix Coconut Chicken Curry Recipe is always a roaring success at dinner time. I really think the secret to this curry is using my ThermoFun Curry Blend which is just so much more flavoursome than the commercial curry powder.
This recipe was inspired from a magazine I read about 6 months ago that was all about curries, so I have a few more up my sleeve to try. YUM!
Does your family love a hot and spicy curry or a mild curry?
Ingredients
- 1½ tablespoon ThermoFun Curry Blend
- 400ml coconut cream (or make your own)
- 6 garlic cloves, peeled
- 1 onion, peeled and halved
- 1cm fresh ginger
- handful fresh coriander
- 1 tablespoon olive oil
- 1 kg chicken thighs, cubed
- 20g TM vegetable stock concentrate
- 2 medium carrots, diced
- 1 cup chopped celery
- 2 tomatoes, diced by hand
- handful snow peas
- cooked rice to serve
Instructions
- If making curry blend do this now and set aside.
No need to wash TM bowl. - If making coconut cream do this now and set aside.
No need to wash TM bowl. - Place garlic, onion, ginger, coriander and oil into TM bowl and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add chicken, curry blend, stock and coconut cream and cook 12 mins / 100°C / Reverse / speed 1.
- Add carrots, celery and tomatoes and cook 4 mins / 100°C / Reverse / speed 1.
- Add snow peas and continue to cook 2 mins / 100°C / Reverse / speed 1.
- Serve on a bed of rice.
Notes
Recipe suitable to freeze.

Ok so my boys n hubby all hate coconut I had tried with evaporated milk but it always seemed to runny. Lately I've been doing curries with yogurt so I tried that tonight with this recipe n it worked perfectly n no grumbles from the boys. Lol!☺ Thanks love how I can adjust these recipes n they still work.

What a delicious curry! I'm so happy it makes a generous serve...means I can have it for dinner tomorrow again?. I like to keep a little crunch to my snow peas so I put them in the bottom of the thermoserver and poured the chicken curry on top of them. While my rice steamed, the snow peas had a chance to soften a little with the heat of the curry. Yum!

I ABSOLUTELY love this recipe and did have intentions of putting some in the freezer, but that never happened as scoffed the lot! lol
As I like my chili thick and strong, I made your homemade coconut cream (YUM!) and used 120 grams of green curry paste and 350 grams coconut cream! YUM YUM YUM and would highlight recommend the recipe!

Nice mild curry for kids to enjoy. Next time might try adding bit of curry powder. Did use garam masala instead of your spice mix.

Oh and I used red capsicum, potato's, carrot PLUS Snow Peas (Just curry, a touch cumin instead of garam masala and a touch of turmeric)

Hi there.... tried this today as I wanted to convert a very similar dish I would normally cook on the stove to the thermomix and found this one to be simple and relative. It was absolutely delicious and chicken tender. I did not use the tomatoes however as I like the taste of the coconut to come through. It was a hit with all of us!! Tasty without being too Spicy. If you like it hot just add fresh chilli and fresh coriander as I did directly on my dish !!!

Sounds delicious… you could also grate the ginger in the Thermo bowl before you start. I hate grating ginger! Do you find the chicken sometimes gets stuck in the blades?

Thank you for pointing out that I had "grated" ginger in the list of ingredients. I have now amended the recipe - as the TM chops it up in the first step with the garlic etc. Yes the chicken can get stuck on the blades which can be annoying. Make sure you cut the chicken into big cubes too - so the chicken doesn't fall apart too much.

Tried this curry for the first time tonight and got a thumbs up from all the family. Very flavoursome yet mild, so kid friendly. Chop up a small chilli in your serve if you like it spiced up a bit.

This tasted a bit like an English curry to me, a similar taste to my grandmothers curried eggs so took me back which was nice but not a fave for me.
However was great to try something I haven't tried yet and I know I can use it as a base but try using different spices to get the flavour I'm after.
In fairness I have to mention that I hate coriander so I omitted it from the recipe so that probably totally altered the taste.
If you enjoy a mild curry then this could be great for you I think.

To make the coconut cream, do you soak desicated coconut or coconut from the shell? If from the shell do you remove the brown bit that sticks to the coconut when removed from shell. Many thanks.

Hi Leonie, thanks for this recipe which I tried tonight. I found I had to divide in half as there was too much in the bowl and as I like my veges cooked I had to take them out and microwave. Next time I will try half quantities as I am only feeding myself and there is heaps there.

What a pleasant surprise! I don't like coriander or ginger but loved this.
I made it low fodmap / fructose friendly by leaving out the onion and garlic and using garlic infused oil instead of EVOO. I also used green beans instead of snow peas. I used 4 carrots and 1 large stalk of celery. I used 1/2 Tbsp curry and 1 Tbsp garam marsala.
The only changes I will try next time is parsley instead of coriander (yeah I know, I'm nuts) and maybe a bit of cornflower to thicken the sauce a bit.

We love curries, well I love curries, my children 4 and 7 still are not allowed to these flavors, here in Spain we don´t cook spicy, but I love spicy food, so I like both hot and medium, Thanks for the recipe!!!
