I thoroughly enjoy curries and ever since I have been using my curry blend in each of my curries, in place of commercial curry powder, the result I think is significantly more tasty! I would recommend you have a go at making your own coconut cream too for this curry.
A great recipe for you to learn the value of being able to make your own spice blends which are always so much more flavoursome doing them from scratch ourselves than buying them. I tested this theory the first time of making my own Garam Masala and then smelt the commercial jar of Garam Masala that I still had in my pantry – seriously, the difference was just unbelievable.
Ingredients
- 2 tablespoon ThermoFun Curry Blend
- 400g ThermoFun Coconut Cream
- 400g rice
- 1000g boiling water from kettle
- 2cm fresh ginger
- 2 garlic cloves, peeled
- 1 red chilli
- 1 onion, peeled and halved
- ½ teaspoon cinnamon, ground
- 1 teaspoon black pepper
- 20g olive oil
- 2 potatoes, cubed (200g)
- 2 carrots, cubed (200g)
- 50g water
- 700g chicken thigh fillets, cubed
- fresh coriander to garnish
Instructions
- Make ThermoFun Curry Blend and set aside. No need to wash TM bowl.
- Make coconut cream and set aside.
No need to wash TM bowl. - Place rice into simmering basket and rinse under cold tap until water runs clear.
- Pour boiling water into TM bowl. Carefully insert basket into TM bowl and cook rice 18 mins / 100°C / speed 2.
- Remove basket with aid of spatula. Place rice into pre-warmed ThermoServer. Discard water from TM bowl.
No need to wash TM bowl. - Place ginger, garlic, chilli, onion, curry blend, cinnamon, pepper and oil into TM bowl and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add potato, carrot, water, coconut cream and chicken and cook 20 mins / 100°C / speed 1 / Reverse / MC off, placing simmering basket onto TM lid to prevent spatter.
- Serve with rice and garnish with coriander.

What happens with the coconut cream? Do you add it to the Curry?

I made the curry powder and the coconut milk before making this curry and I loooooved it! Since I do not eat rice, I increased the veggies . Great recipe. I loved it so much I immediately made a second batch. Thank you for sharing!

My husband loved the flavour of this curry - I made the Thermofun curry powder - and happily made himself a bunny chow with a fresh loaf of bread. I found it just a little bit too spicy for my taste but, as a rule, I don't enjoy spicy food so I may adjust the curry powder next time I make it.
Thanks for this recipe. We have been married nearly 28yrs and this is the first time I have been able to make a curry that actually tastes like curry and not a casserole that I wafted some curry powder over !!!! LOL I will definitely be making this again.
