
This recipe came from a dear friend named Julie who LOVES pecan pie and wanted to share the love with everyone - however she did ask me to convert it for her so it can be made in the Thermomix! This recipe was loved by many on the ThermoFun June 2014 Cook Along.
Ingredients
- 170g raw sugar
- 22 Jatz biscuits
- 125g pecan nuts
- 3 egg whites
- 1 teaspoon ThermoFun Vanilla Bean Paste
Instructions
- Preheat oven to 180°C. Grease a pie dish.
- Place sugar into TM bowl and mill 3 sec / speed 9. Set aside.
- Place pecan nuts into TM bowl and chop 2 sec / speed 6. Set aside in a large mixing bowl.
- Place Jatz biscuits into TM bowl and chop 4 sec / speed 6. Set aside in same bowl as pecan nuts.
- Clean and thoroughly dry TM bowl.
- Insert butterfly into TM bowl.
- Place egg whites into TM bowl and whip 6 mins / speed 3 / MC off.
- While blades are moving, very slowly add sugar 1 min / speed 3, then add vanilla and continue to mix 30 sec / speed 3.
- Add meringue mixture to crushed nuts and biscuits in the large mixing bowl and fold together with aid of spatula.
- Pour into pie dish. Bake in oven for 25 mins.
- When cool, whipped cream may be spread over the top of the pie or a dollop of cream on the side of each slice when serving.
Notes
Hazelnuts, walnuts, cashews or almonds can be substituted for the pecan nuts.
"Clix" biscuits also are suitable.
"Salti" biscuits work well if you want it to be gluten free.
