At the beginning of this year I received a collection of chocolate recipes from ThermoFun members, that had been put together by a couple of Funky members. This fudge recipe was in that collection from Rheannon T. Many thanks Rheannon. I hope you enjoy it as much as we do!
Ingredients
- 210g raw sugar
- 60g chopped pecans
- 250g dark chocolate melts
- 125g butter, unsalted, cubed
- 2 eggs
- 85g sour cream
- 160g plain flour
- 80g self raising flour
- 20g cacao
ICING
- 240g icing sugar
- 20g cacao
- 30g butter, unsalted, cubed
- 2 tablespoon hot water
- Option: handful extra pecans to decorate
Instructions
- Pre heat oven 180°C. Line a 28 x 18cm slice tin.
- Place sugar into TM bowl and mill 3 sec / speed 9. Set aside.
- Place pecans into TM bowl (if they are whole and not pieces already) 2-3 sec / speed 6. Set aside.
- Place chocolate into TM bowl and chop 6 sec / speed 6.
- Add butter and melt 2 mins / 50°C / speed 2. Scrape down and continue melting 1 min / 50°C / speed 2.
- Add sugar, eggs and sour cream and mix 10 sec / speed 5.
- Add plain flour, SR flour and cacao and mix 10 sec / speed 5.
- With aid of spatula, stir through the chopped pecans.
- Press mixture into slice tin and bake for 25 mins. Be careful not to over cook this fudge – when you test it with a skewer it should come out a little bit moist. Allow to cool in the tin for at least 30 mins.
Icing preparation
- Place all icing ingredients into TM bowl and mix 20 sec / speed 5. Add a little more water if required.
- Spread icing over the cooled slice and dot with extra pecans if desired.

Made this for hubby's birthday but used Macadamia nuts instead of Pecans. Absolute winner!!!! Will be making this one again.

I haven't made this yet I was about to when I noticed the recipe says 160g Plain four twice is that a mistake or do we add 2 x 160g and the SR flour ?
